Internship Evaluation
1. Monica has with her great commitment, and equal parts idealism and business sense,
delivered a presentation, which has served as a great inspiration for BYG at University
College Metropol. We have through Monica’s in depth research, collected from Students as
well as several Danish Ministries, gained new insight into the possibility of establishing
another business model, for the upcoming Food Court / Food Retail at Campus Copenhagen,
which looks into the possibility of delivering meals from an innovative lab, that enables
interaction with all of University College Metropol’s professions, and actually proposes an
opportunity for learning, where the students leave the meal having gained a greater
knowledge, concerning all the contents, and processes involved.
Monica has persistently collected evidence through a comprehensive survey, focusing on the
student’s meal and food retail habits, and simultaneously researched the legal aspects in the
respective ministries. This also embeds the logistics and the use of labor.
Monica has passed her practical training at BYG with distinction. Especially because she has
come up with an innovative, inspiring perspective, in a traditional field. Because of the
research material, increased value can be created, both in regards to student and employee
health at University College Metropol, but it can also serve as a foundation for new ideas in
food production and the creation of a learning lab.
