一、公司目的
标准简便披萨自助
二、问题
1. 客户的现状:西式快餐品牌单一。中式快餐加
工复杂,卫生存疑。
1. 客户的应对:西式一般只有M、KFC。或就近
吃中餐。
三、解决方案
1. 如何解决客户难题。可以从品牌、卫生、快捷、
价格来解决。
 品牌:与必胜客同类但是加以区别的品牌定位,更简,
更快,当然也便宜。以披萨为主的自助,芝士管饱。提
供大概10种口味披萨,分为蔬菜类,肉类。搭配3-4种
面包蛋糕,奶酪条,巧克力餐包,简单小蛋糕。设蔬菜
沙拉区,萝卜,生菜,紫甘兰,黄瓜,酱黄瓜,小玉米,
小蕃茄,青椒,黑橄榄,西芹,红豆罐头,螺粉意面拌
橄榄菜。两款汤:鸡蛋汤,馄饨汤。饮料有水、可乐、
雪碧、芬达。
 卫生:店堂无明火机械设备生产。中央厨房冷链配送完
成前期加工。后厨加热半成品。食品机械投入一步到位。
(饼底包括和面发酵半熟加菜肉冷藏,类似超市冷冻披
萨。所有沙拉配料都是可以冷藏的,加工切好。
 快捷:披萨只要烤箱加热10几分钟,视现场需求
补充不同的口味。披萨自助台面可加热保温。两
款汤和意面现煮,保温。
 价格:选材普通。菜有菠菜、青椒、蘑菇、蕃茄。
肉有:熏肉、烤肉、肠
 口味:饼皮要保持松软,在自助台面时,饼底放
一个网架透气。做一到两款辣味披萨。四种口味
沙拉酱。
2. 产品的市场价值:低于必胜客的价位,用更加简
单的程序,使更多的人能以更方便的方式吃到披
萨。在价格上稍贵于中餐,作为M,和KFC的同档
产品,披萨使用更多的芝士,给人新鲜感。特别
是孩子更加喜欢吃芝士面饼,这点必胜客已经给
出验证。
3. 产品的加工销售流程:顾客进场程序简单:
排队柜台确定饮品(水免费用透明杯,饮
料加10块钱无限续杯用一次性大纸杯)付
款取杯进场自助用餐。自助台面视现场需
求提供10种左右口味的披萨。
产品中央厨房的加工模式如下:采购面粉蔬菜
肉类中央厨房机械和发面/改刀半熟披
萨冷藏冷链运至门店冷藏后厨人员按
需出产品。
饮品批发冷藏按售量注入机械顾客自取。
四、时机,为何是现在?
• 必胜客小贵,不是快餐,但一直火。
• 一线城市披萨自助兴起,生意好。
• 二三线城市没有披萨自助快餐。但年轻消
费者闲暇聚会光顾牛排等老式西餐餐厅。
• 有M和KFC作为西式快餐先锋,也一直保持
不错的业绩。
五、市场规模
• 目标客户:商务、工薪、年轻父母和小孩、
学生
• 市场规模:初期,争取本地人群新鲜便捷。
加盟发展后,类似M和KFC。
六、竞争格局
1. 竞争对手:
 必胜客:在饼皮差不多松软,口感差不多的情况
下。我们由于店面简装,桌椅餐具简单,附属产
品简化并且种类少,饮料简单,价位应低于必胜
客。
 M和KFC:进场早,产品油炸,少量芝士,差不多
该尝试的人都已经吃过。我们是烤制,大量运用
芝士,饼皮类似中餐中烤制的饼,口味运用蕃茄
酱,中西结合,不油腻,有新鲜感。
 中式快餐:不想挤兑他们。今天吃什么?由人自
选。
七、产品
1. 产品形式:种类简单,标准化机械生产。
 原料适合机械化生产
 大量加工不影响品质
 原料价位不能高
 充足
 控制数量
原料分为两大类:一是高筋低筋面粉,酵母,水做饼
底。另一类是披萨上的菜肉配料和沙拉配料。菜类基
本适宜冷藏,肉类腌熏过的基本是成品。调料主要是
蕃茄酱沙拉酱,或者有辣油。
2. 开店计划:
 本地开第一家,没有中央厨房。考虑
和面机一台,烤箱两台,人工加工饼
底及配料。赚钱后,上规模。
 没有团队:要走开设流程,注册,租
店,装修,进货,主厨,收银,自助
台上饼,保洁
八、商业模式
1. 收入模式:根据城市人口数量设定门店与中央
厨房,以直营店的模式来保证产品和服务质量
的稳定以及成本控制。标准化饼底和配料,上
产量,扩大销售。
2. 客户清单:提高服务,不打扰顾客用餐。店面
包括洗手间洁净,洗手台洗手液餐纸烘手器配
备。WIFI覆盖。中央空调新风系统。音乐适宜。
美团点评网打折简单靠谱有执行力。不设代金
券和会员卡。可以有礼品卡。
3. 公益项目合作支持(民间不含红会),提高品
牌形象。
九、团队描述
1. 创始人与核心管理层:创始人本着比上不足比
下有余的感想,认为馒头都卖得,沙县小吃都
遍地。想从中盈利的话,总有一款合适你。
2. 董事会成员:慢慢来。
十、财务资料
1. 股本结构:在组织到靠谱的人做事之后,才会
有靠谱的资金支持。股本结构按投资惯例。
2. 融资计划:约200平门店预算,转让费20万,
半年房租10万,装修10万,前后设备2万,前
期培训2万,流动资金10万,(中央厨房15
万),开业备料3万,合计:50万左右吧。
个人得失:
• 有想法,有创意,有资金
• 没有团队
不论东方还是西方,有钱就有更多自由。不
仅是个人自由。
