● Slice the fresh tomatillos in half and place
them cut-side down in a skillet over medium-
high heat. After about five minutes of roasting,
turn the tomatillos over, then remove the pan
from heat and cover it with foil. Note: If you’re
using canned tomatillos, they are already
softened, so just proceed to the next step.
● After the tomatillos have steamed in the
skillet (about 15-20 minutes) and are very
soft, place them in a blender along with the
chipotle powder, chopped onion and cilantro.
● Process in
the blender until
puréed—adding
a spoonful or
two of water if
necessary—to
make a thick
sauce that will still
slightly run. Taste
and add salt if desired. Serve either warm or
refrigerated. Makes about 3 cups of salsa.
