 An accomplished Houston business owner, Assad Boulos has established a
number of popular eateries in the area, including Juan Parilla, which features
Colombian food. Assad Boulos also owns Wasfi, which offers a Mediterranean-
inspired menu by chef Wasfi Darabi in a relaxed, inviting atmosphere.
Among the popular appetizers on the menu are falafel, hummus, spicy
Armenian sausage called sujok, and its Lebanese counterpart, makanek.
Traditionally made during the winter months in the mountains, sujok contains
beef or lamb and a bold and aromatic mixture of spices. These include paprika,
allspice, cumin, and sometimes fenugreek. In addition, several garlic cloves are
minced and added to the mixture.
One unique aspect of traditional sujok is that it is dry cured, often by hanging
it in a special bag on a shady part of a balcony. The versatile sausage can be
eaten in many ways, most frequently in pita bread with items such as lettuce
and tomato.
