On the lowest level of TheTiger Hotel,
TheVault offers Satan’sWhiskers, a
strong drink and a throwback to the
era of proper cocktails.
The combination of the Beefeater
gin and sweet and dry vermouth
is toned down with hints of fresh
orange juice pulp in the cocktail.
Regan’s Orange Bitters adds a hint of
cinnamon spice for a slight kick, and
for the drinker with more of a sweet
tooth, the curled option highlights
the orange flavor with the addition
of Cointreau. Or try straightening the
whiskers with a dash of Grand Marnier
instead.
A big fan of classic cocktails,The
Vault’s manager, Jason Dixon, explains
how Satan’sWhiskers dates back to
pre-prohibition times when
cognac, brandy and rum were hot
commodities. After prohibition, mixed
drinks evolved into what they are
today — sugary concoctions poured
from plastic bottles.
The classic cocktail has only four
components: spirits, sugar, bitters
and water or ice. But when alcohol
was made legal once again, everyone
forgot the way old-school drinks were
created.
Satan’sWhiskers is one of those
proper cocktails. “I wanted to create a
cocktail menu that would have been
recognizable to someone who stayed
atTheTiger [Hotel] back around the
time [it] opened in 1928,” Dixon says.
“Unlike a lot of the other classics
whose histories are shrouded in a
dozen contradictory legends, Satan’s
Whiskers appears out of thin air.”
With years of slick bar floors under
his feet and a stack of cocktail books,
Dixon transports patrons ofTheVault
to a speakeasy vibe atmosphere that
mimics the 1920s prohibition era.
This is one forbidden fruit that’s
worth the trip, whether the path is
straight and narrow — or curled and
twisted.
