2. Grilled Steelhead Tacos
Including Both Spicy & Savory Versions
Spicy Rub Ingredients
1 tablespoon smoked paprika
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon garlic powder
2 garlic cloves chopped
& Cumin to taste
¼ cup melted butter
Savory Rub Ingredients
2 tablespoons Old Bay Lemon & Herb
1 teaspoon garlic powder
¼ cup melted butter
1. Wash and dry filets.
2. Cover fish with rub.
3. Seal into foil pouch.
4. Cook on high BBQ heat for 5 minutes.
5. Turn & cook 5 more minutes.
6. Reduce heat to low and cut vent in top of pouch.
7. Cook additional 3 minutes.
8. Enjoy with your favorite taco toppings!
3. Pan Seared Steelhead
with Jalapeno Blueberry Sauce
Ingredient List
Steelhead Salmon Fillets
Salt & Pepper to Taste
2 T Sugar
½ C Apple Juice
2 C Blueberries
4 Jalapeños, finely diced
1 T Vegetable Oil
1. Wash and dry filets.
2. Sprinkle with salt, pepper, & sugar on one side.
3. Heat oil in frying pan on medium-high heat.
4. Fry fillets spiced side down & lid on 1-2 minutes per
side.
5. Bring apple juice to boil in saucepan on medium-high.
6. Stir in 2 T sugar until it dissolves.
7. Add in blueberries and jalapenos.
8. Reduce heat to medium and stir until thickened.
9. Spoon sauce over finished filets.
4. Broiled Steelhead Trout
with Rosemary, Lemon, & Garlic
Ingredient List
1 lb. steelhead fillet, with or without skin
1 clove garlic, chopped fine
1½ T coarsely chopped fresh rosemary
1 lemon zest
1/2 lemon juice
1/4 t salt
1/2 t fresh ground pepper
1 T olive oil
1. Preheat broiler.
2. Line baking sheet foil & brush with oil.
3. Wash and dry filets.
4. Excluding fish, mix all ingredients into a paste.
5. Place fillets skin side down on baking sheet.
6. Spread seasoning paste over fish.
7. Broil on 2nd rack down until flesh is seared (about 5
min)
8. Lower to 3rd rack and bake at 325 until cooked (10
min)
9. Serve with steamed veggies or salad.
