1. Reference for Lily de Sylva
I worked with Lily on the delivery and development of the Transition Year programme at
Cloughjordan Cookery School in 2011.
Using a hands on, group oriented learning approach, the programme aims to broaden
students awareness of food, from seed to soil, from harvest to plate. Students learn where
their food comes from, identify seeds, vegetables and cereals and learn about the animals that
produce our meat and milk. Students then practice basic and advanced cooking techniques
using freshly harvested seasonal ingredients.
Lily has been teaching and revising this innovative course for the last four years.
The energy, commitment and drive Lily puts into the projects she works on contributes to her
success and has proved a great resource when developing programmes with her.
Lily always brings a very well rounded perspective to all the courses she delivers due to her
extensive knowledge and experience.
