As an employee of The Perch you must be able to work under pressure, recognise the

knowledge of wine and food, be a strong team member and willing to work long
hours.
Maciej was originally hired as a waiter but his skills promptly made him the best
candidate for the job of restaurant manager.
It was always understood that Maciej would only be with us for the season and it is
