Results showed the fatty acid composition varied somewhat based on location and accession. Overall, stearic acid dominated at 45.1-49.7% across samples. The fatty acid profile indicates Nigerian shea butter is most suitable for the food industry. Further sampling could provide more data to help source butter for different end uses.
