The Latte

What is a Latte?
• 10 to 12oz espresso and milk drink
• Very good “Pick Me Up” in the morning
Things needed
• 12oz Pitcher and Thermometer
• Whole Milk
• Espresso Coffee Beans
• Espresso Machine
• Coffee Grinder and Scale
• Tamper
Prep Milk
Roughly 12oz of whole milk in pitcher
The Coffee gear
Make sure tamper and tamp pads are ready with shot glass and scale
Grind Coffee
Grind coffee by manually or the automatic grinder (the grinder is set
up by first shift staff)
Tamp the grind
• Apply 30lbs of force to grind
• This is done to make sure the coffee is evenly contacted with water
Pull the Shot
• Follow the shot recipe(different coffees have different recipes)
• Grams in
• Time of exposure
• Grams out
Milk frothing
Insert steam ward in milk
Gentle tearing or hissing sound should be heard
Heat milk to 120-140f (activates sugars in milk for flavor)
The pour
Put shot in the cup
Hold the pitcher higher to pour the lighter steamed milk in the cup
Hold pitcher lower to the heavier foam milk
The Monks head
Most basic of latte art
Clear contrast of coffee and milk
