Dentre as grandes transformações históricas da época moderna que tiveram importantes consequências no sistema alimentar, está a Reforma protestante. Este movimento ruiu uma regulamentação eclesiástica que constituía um poderoso fator de unidade da alimentação ocidental na Idade Média; a Reforma, portanto, estimulou a diversificação das cozinhas nacionais; é o caso também da dominação econômica dos países do norte da Europa, que favoreceu a produção e o consumo de álcool — tanto em países consumidores de vinho como nos outros, talvez na mesma medida; e também do desenvolvimento da imprensa, que acarreta a difusão da cultura escrita: ela modifica a função do livro de cozinha e privilegia a influência de determinadas cozinhas nacionais em detrimento das de outros países da Europa.
