as burritos and quesadillas.Their neutral flavor and soft texture make them wonderful foundation
ingredients for dishes such as garlic eggplant tofu, eggplant parmesan or babaghanoush. Eggplants have
many nutrients including potassium, folic acid, and many antioxidants.
