This document outlines the traceability model for an innovative food and biotechnology group. It shows the process flow from receiving raw jumbo and standard shrimp in 50-60 lb bags through grading, sorting, processing like de-heading, peeling, cooking, and other processes. Each step scans and labels the product bags with a serialized lot ID and other details to track the product. The labeled bags are then cold stored, prepared for shipping, loaded onto trucks with a pallet label, and delivered to customers with a bill of lading created in the SIMBA office to enable full traceability.
