2. ¿Qué es esto? : What is it?
• Es un plato sabroso que se servía
como primer plato. Os daba una
sensación de saciedad y, de este
modo, ayudaba la ama de casa a
suplir las deficiencias de carne. Pero
hoy en día, lo se consideran una
delicadeza. En los restaurantes, por lo
general, se sirven en forma distinta
(el mismo como un ‘muffin’ de
Starbucks) y al mismo vez como la
carne. Pero un hombre de
Yorkshire, consciente de su dignidad
personal, no los comería de este
modo.
• Yorkshire Pudding actual es un primer
plato…………..
• It is a savoury dish and was originally
served as a first course. Because it is
satisfying, it helped to eke out scarce
meat supplies. But crisply-made
Yorkshire Pudding is now considered
a delicacy. In restaurants you will
often see round puddings about the
size of a Starbucks muffin and served
at the same time as the meat. No
self-respecting Yorkshireman would
eat them in this fashion!
• True Yorkshire Pudding is a
‘starter’……
3. ¿Cómo lo hace? : How do I make it?
• Reglas básicas
• (i) El horno debe de estar muy
caliente
• (ii) Es necesario usar grasa de
vaca, de cerdo o de ganso.
Aceites vegetales no funcionan
muy bien a temperaturas
altas.
• (iii) usa una bandeja metálica
del horno.
• (iv) Siempre usa harina simple
(que no contiene levadura)
• Basic rules
• (i) have the oven very hot
• (ii) use beef dripping (or lard
or goose fat) - Vegetable oils
are not good at the required
temperature.
• (iii) use a metal container
• (iv) always use plain flour (not
self-raising).
4. Utensilios : Utensils
• Un tazón grande
• Un tamiz
• Una batidora
• Un jarro para medir
• Una bandeja metálica del
horno (≈ 40cm x 25 cm)
• Large mixing bowl
• Sieve
• Whisk (preferably electric)
• Measuring jug
• Metal roasting tray
(approx 40cm x 25cm)
5. Ingredientes : Ingredients
• 150g Harina simple
• 2 huevos medianos
• 250 ml leche desnatada o
semidesnatada
• Sal y pimienta negra
• 2 cucharas grandes de
pringue de vaca
• 150g Plain Flour
• 2 medium eggs
• 250ml skimmed or semi-
skimmed milk
• Salt and black pepper
• 2 Tablespoons of beef
dripping
6. El método : Method
1. Precalienta el horno a 240°C (no
usa el ajuste de convección si se
lo puede evitar. Hornos de
convección no pueden alcanzar
una temperatura suficiente )
2. Tamiza la harina en el tazón.
Añade un pellizco de sal y
muele algo de pimienta negra
fresco.
1. Pre-heat the oven to 240°C (do
not use a fan setting on your
oven if it can be avoided. Fan
ovens do not really get hot
enough)
2. Sift the flour into the bowl. Add
a generous pinch of salt and
grind in some fresh black
pepper.
7. 3. Mezcla y luego haz una
cavidad en el centro.
4. Añada los huevos y la mitad
de la leche poco a
poco, batiendo hasta se
parece como un engrudo de
papel de paredes.
Luego, añada el resto de la
leche y bata otra vez hasta
que este suave.
3. Mix together and then make
a ‘well’ in the centre.
4. Add the eggs and half the
milk, gradually beating until
it resembles a smooth
wallpaper paste. Then add
the rest of the milk and again
whisk until smooth.
8. 5. Deja la mezcla reposar en el
frigorífico para diez minutos
6. Pon la bandeja en el horno
hasta llega a temperatura.
Remueve del horno, ponlo
sobre calor directo y echa la
mezcla en la grasa
crepitando.
7. Coloca la bandeja al horno
de neuvo sobre el estante
más alto y baja la
temperatura a 220°C.
5. Let the batter ‘rest’ for 10
minutes in the fridge
6. Put the tin in the oven until it
comes up to temperature.
Remove from the oven and
place it over a direct heat
whilst pouring the batter into
the sizzling hot fat.
7. Return the tin to the oven on
the highest available shelf
and turn temperature down
to 220°C
9. Nota final : Final note
Se hincha en aproximadamente 30
minutos y llegará a estar crujiente y
dorado. Sirvelo lo antes posible - si
no, no estará crujiente.
Por tradición, se sirve con salsa
hecha de caldo de carne casero.
• Espero que esta receta surta efecto
para ti. Cuando lo has vencido, se
puede probar variaciones, como
rociando de cebollas fritas casi
hacia de la mitad del tiempo de
cocinar. Por otra parte, sirve
llenado con chile con carne o
‘curry’. Y SI sobra algo, ¡se puede
comer con mermelada!
The pudding will take about 30
minutes to rise and become crisp
and golden. Serve as soon as
possible, as it loses its crunchiness if
it has to wait around too long. It is
usually served with gravy made from
stock and meat juices)
• I hope that this recipe works for
you. Once mastered, you can try
some variations, such as
sprinkling fried onions on the top
about half way through the
cooking. Alternatively, serve filled
with chili con carne or even curry.
And IF you have any left over, it
can always be eaten with jam!
