It is the night of the full moon in the twelfth
month of the lunar calendar—and
something magical is happening. Hundreds
of lights blossom in the darkness.
Reflections dance on the water. At the
shores of rivers and lakes throughout
Thailand, revelers are setting small floating
sculptures in the water, each containing a
candle—and a wish for the year ahead.
Just as magical is what is taking place
overhead. In Chiang Mai and other major
locations, hundreds of paper lanterns are
released to float into the sky. Like luminous
spirits, they drift high above, filling the
night sky with warmth and light.
This is Loy Krathong, a dreamlike
celebration of hope and wonder. Popular
mainly in Thailand, but also in Sri Lanka,
Cambodia, and Myanmar, it usually takes
place in November according to the Western
calendar. For any traveler who will be
visiting any of these countries during that
time of year, but especially Thailand, Loy
Krathong is the experience of a lifetime.
THE STORY OF LOY KRATHONG
What is the origin and meaning of Loy
Krathong? “Loy” translates to “to float,”
while “krathong” refers to the candlelit
vessels made from banana leaves and trunks
which are released on the water during the
festivities.
While the origins of the festival are hazy,
there is a legend that the celebration dates
back to the Sukhothai Kingdom, which
places the roots of the celebration sometime
between the 13th and 15th centuries, and
that it was started by a lady of the court
named Nopphamat. More likely however, it
was originally a Vedic ritual which was
taken up later by Buddhists—as described
by King Rama IV in the 19th century.
The festival is deeply symbolic. The candles
are to honor the Buddha, while the act of
floating the krathong is a gesture of letting
go of the past while expressing hopes for
the future. Those who worship the water
goddesses also venerate them through this
act. That makes Loy Krathong a deeply
cleansing, liberating ritual.
HOW TO MAKE YOUR OWN KRATHONG
Travelers in Thailand during Loy Krathong have a chance to partici-
pate in the festival! This is as simple as making a krathong to float
on the river. Here are the basic steps:
That is all there is to it! Travelers who do not want to make their
own krathongs will find plenty for sale from vendors throughout
cities and towns in Thailand during the days leading up to the festiv-
ities. For those who travel to Asia in search of new beginnings, there
is no more enchanting way to bid farewell to the past and welcome in
a bright and magical future.
1. You will need a banana trunk to start with. Cut it to serve as the base of
the krathong.
2. Attach banana leaves around the base, pointing upward. You can use
pins for this.
3. Attach a second layer of banana leaves around the trunk, but this time
alternate them with the previous set. This creates a “blossom” effect.
4. Trim the leaves as needed where you attached them to make a nice flat
surface inside.
5. Put flowers in the center of your krathong. The purple amaranth globe is
a traditional choice, but you can go with anything you want. Attach these
securely with pins as well.
6. Drop a few coins inside along with incense sticks and a long, thin candle.
The candle needs to stand clear so that it can burn.

one where more than 700 languages are spoken and

‘’INDONESIA ITU INDAH’’

MAGELANG
Forty kilometers north of Yogyakarta is
Magelang, another Javanese city well
worth a visit. While Magelang is less
populous than Yogyakarta, there are
numerous adventures to be had here
rafting on the Elo River, touring museums,
shopping, and exploring temples.
Indeed, Magelang is even closer to the
9th-century Mahayana Buddhist temple of
Borobudur. This historic site is actually
the largest Buddhist temple in the world
with nine platforms stacked one atop the
other and an impressive dome in the
middle. Even though it is an ancient
archaeological site, it remains a thriving
center of modern Buddhist worship and
ceremony today.
On the site there are 504 statues of the
Buddha and 2,672 relief panels, each one
an astonishing work of art. Borobudur is
the most visited attraction in Indonesia,
drawing in millions of visitors
annually—and it is easy to see why. A
pilgrimage to this site is a truly
unforgettable expedition into the history,
mysticism and majesty of Indonesian
culture.

Yogyakarta
In Java, discover the charms of the city of Yogyakarta. Here, the historic heritage of the
island melds with the unique modern culture of the city, offering a mix of new and old.
Strolling along these timeless streets, tourists can immerse themselves in the characteristic
sights, smells, and sounds of Indonesia. Partake of delicious street food, purchase handcrafts
and keepsakes, and chat with the locals. This is a great place to shop for Javanese puppets,
silverwork, filigree and batik. While here, also take the chance to attend a puppet show or
traditional Javanese dance performance.
While Yogyakarta offers many diversions, it also serves as a staging post for day trips to some
of Java’s most iconic sites, including the Borobudur and Prambanan temples. There are also
nine geoheritage rock sites located nearby along with some amazing caves and beaches, not
to mention some amazing museums back in town.

RAJA AMPAT
Paradise for Divers
Departing Java, we come to the island of Bali. If Indonesia is the Emerald of the
Equator, Bali could be a diamond. Bali’s reputation for tropical sunshine and an
inviting populace is so iconic that just the name “Bali” seems to evoke a sense of
warmth and welcome.
The ambiance here is one of sun-soaked, lavish romance, which makes it the perfect
spot for a honeymoon getaway. Stay at an opulent beachside resort, shop and dine in
the quaint traditional town of Ubud, or explore the rice fields, temples, and lush
rainforests and waterfalls. View ritualistic performances and traditional song and
dance at any of the island’s numerous ceremonies or
celebrations. Infused with spirituality, flower petals, and delight, Bali has something
to offer every tourist seeking an escape from the ordinary.
For those who enjoy a dip in the clear blue waters surrounding Indonesia, the ultimate destination
may be Raja Ampat. This exquisite archipelago consists of more than 1,500 islands, islets, cays,
and shoals around four principle islands: Batanta, Misool, Salawati and Waigeo—known as the
“Four Kings.” Raja Ampat is in a region known as the “Coral Triangle,” which is renowned for its
extraordinary marine biodiversity.
Indeed, this is a remarkable place to swim, snorkel, and dive. The nonprofit group Conservation
International believes that this might be the most biodiverse marine ecosystem on the
planet. The
remoteness of these islands ensures that the immense coral reefs here are able to
thrive without human disruption. Dive or snorkel here and behold a living
rainbow of more than 1,500 species of fish and over 530 species of coral.
Also be on the lookout for sharks, and be sure to visit the pools on
Misool where it is possible to swim with thousands of
harmless jellyfish—a once-in-a-lifetime
experience.

Finally, one last extraordinary destination in Indonesia which should be on every traveler’s
itinerary is Kodomo National Park. Found between East Nusa Tenggara and West Nusa Tenggara
in the Lesser Sunda Islands, this UNESCO Heritage Site consists of three large islands along with
26 islets.
As the name indicates, this park is best known for its resident komodo dragons. These are the
largest lizards on the planet, a member of the monitor lizard family. They were able to evolve to
their impressive size (up to 3 meters in length) owing to the fact that they are the sole carnivores
in their niche on the islands.
Nonetheless, the islands also are home to numerous other amazing animals, including vipers,
cobras, wild boars, water buffalos, parrots, cockatoos and others. There is also incredible marine
diversity surrounding the islands; manta rays, whale sharks, octopi and other fantastic creatures
live in the reefs here.

A UNESCO Heritage Site
Head to the northwest tip of Lombok, and
prepare to gasp in amazement. The
spectacularly scenic destination which will
steal your breath away is the Gili Islands.
Comprised of three islets, the Gili chain is a
haven of white sands and rustling palms
surrounded by crystalline waters.
During peak season, the Gili Islands can be
quite crowded. Despite this fact, there is still a
sense of tranquility here. Motorbikes are not
permitted on the islets, which keeps the noise
levels down. Gili Trawangan, or “Gili T” as it
is known locally, is a party spot, while Gili Air
has a local flavor which is more laid-back and
serene. Gili Meno is the least developed of the
three islets, offering a respite from the crowds.
But no matter what part of the islets travelers
choose to explore, one thing is certain, and
that is that Gili Islands are a desert island
dream come true.
KODOMO NATIONAL PARK

Nine days and eight nights of
incomparable sumptuousness and
comfort. That was the promise that

travel writer Jim Dobson. In July this year,
EV invited Dobson on an all-expenses paid trip

To launch his journey, Dobson
arrived at Bangkok on July 5th,
where he was greeted by a private
hostess and guide at the gate. Skipping
the baggage claim lines, he received his
luggage and was transferred to a private
car and then to a speedboat which he
took along the same Chao Phraya River
which Bond himself traversed on an
action-packed boat chase. Dobson’s trip
was of course more relaxing, allowing
him to thrill in the exquisite scenery.
He then spent his first night in the
historic Chakrabongse Villas, an estate
quite literally fit for a prince.
That of course was just the start of Dobson’s
adventure. The magic of his days would melt
one into the next, culminating in an abundance
of delights: A visit to the Wat Pho Temple in
Bangkok, a relaxing stay in the Sarojin Resort
north of Phuket, a close encounter with
Thailand’s lovable pachyderms at Phang Nga
Elephant Park, and of course a private boat trip
to the famous James Bond Island.
Through the entirety of the trip, Dobson
received personal service and access to

staff at Ani Villas, Dobson said, it was “one of

Dobson spent his last evening at the Trisara
Resort in Phuket, enjoying a two-hour
massage as well as a romantic dinner right by
the waterside before heading home.

Looking for a table with a view? Journey to
Koh Kood Island in Thailand to the Soneva Kiri

What is Papri Chaat?
Papri chaat is a unique and unusual
snack, a medley of flavors which you
wouldn’t expect to find in a single dish.
It is at once sweet and tangy, a study in
contradictions which also serve as
perfect complements.
It is one of the most popular local
street foods, so much so that you can’t
go far without running into a papri
chaat joint. When I first arrived in
Mumbai, I was so swept up in all the
sights and sounds of the city that it
took me a while to realize I was seeing
this dish everywhere. So I didn’t try it
right away, but when I did, I fell in
love. For the rest of my trip, I had it
once a day as a snack in the afternoon.
What Goes Into Papri Chaat?
Papri chaat ingredients can vary, but it
is typically made using a special type of
crispy fried dough wafer. These are
called “papri.” Other ingredients
might include boiled potatoes,
chickpeas, tamarind chutney, yogurt,
sev (crunchy noodles), and chaat
masala. Like the flavors, the textures
are diverse—crunchy and creamy all at
once. And of course the dish has an
element of spiciness, and it’s perfect
for vegetarians since it contains zero
meat.
“Chaat” in the name comes from a
Sanskrit word, which translates quite
literally as “to lick.” This is a perfect
description of what this dish makes
you want to do—lick every last bit off
your plate. One plate of papri chaat
just leaves you craving another—it is
that delicious.
A Few Recommended Papri Chaat
Joints in Mumbai
Because papri chaat preparations can
vary, I had a great time in Mumbai
trying as many papri chaat restaurants
and stalls as I could.
I love how many different expressions there are of the
same basic culinary concept. Each is individual, dis-
tinctive—and yet so iconic in its overall profile as to be
unmistakable.
If you are in Mumbai, I recommend a few different
places. First, head to Elco in Bandra West if you want
to try a really popular papri chaat joint that the locals
love. For a place that has been around for ages and still
makes some of the best papri chaat around, try Jagan-
nath Chaturbhuj Halwai in Kalbadevi. Finally, be sure
to hit the legendary Jai Bajrang Chaat Center in Malad
West.
I’ve been learning how to make papri chaat at home,
and it is a great reminder of my trips to Mumbai, espe-
cially that first one during which I became so enchant-
ed with this delicious dish.
But you know what? Nothing beats authentic papri
chaat when you are surrounded by the sights, sounds
and aromas of Maharashtra’s capital. Ultimately,
Mumbai itself is the missing ingredient in my kitchen.
And that is why I will be sure to plan a return trip to
Mumbai soon so that I can indulge in my love both for
papri chaat and the City of Dreams.

chutney. The first time I was
traveling in Mumbai, I noticed
this dish everywhere, and to this
day, nothing brings back memo-

OF MUMBAI

Larb may not be the official national dish of Laos, but it might as well be. Also known as
“laab,” or “laap,” it is a healthy meat salad which may be made using chicken, fish, beef,
duck or pork. A vegetarian version of the dish may also be prepared using mushrooms or
tofu.
Made with fish sauce and roasted rice, it offers a delicious balance of flavors and textures
in an easy-to-prepare dish which is perfect for any occasion. In fact, you can prepare your
own in about an hour at home. Here is how to bring the flavors of Laos to your own kitch-
en in the form of delicious larb meat salad!
RECIPE OF THE SEASON
LARB FROM LAOS
• 2 pounds chicken
(or any meat of your choice)
• ¼ cup long grain white rice, uncooked
• ¼ cup fish sauce
• 1 tablespoon white sugar
• 1 tablespoon shrimp paste
• 2 tablespoons peanut oil
• 3 tablespoons mint, chopped
• 4 minced garlic cloves
• 2 tablespoons galangal, minced
• 2 tablespoons basil, chopped
• 4 green onions, chopped
• 2 red chile peppers, chopped and seeded
• Lime juice to taste
INGREDIENT
1. Preheat the oven to 350 degrees Fahrenheit.
2. Spread the rice on a baking sheet. You need to toast it to get the traditional
flavor of larb.
3. Bake the rice for 15 minutes or so. When it turns a golden color, it is done, and
you can remove it. Set it aside to cool off.
4. Put the rice in a spice grinder. Grind it up.
5. Next, you need to grind your meat. You can do this using a food processor.
6. Put a saucepan on your stove and pour some peanut oil inside. Turn the heat
on medium.
7. Add the green onions, galangal, garlic and chile peppers. Stir them around
and wait for them to cook. Within three minutes, the garlic should begin
softening.
8. At this point, you can add your chicken (or other meat). Continue stirring for
another five minutes. Make sure that your meat is thoroughly cooked.
9. Now, add in the sugar, shrimp paste, and fish sauce.
10. Drop the heat down to medium-low. Continue to simmer for about five min-
utes. Make sure that there is no extra liquid remaining in the saucepan.
11. Finally, you can add the mint, basil, lime juice, and ground toasted rice.
Usually larb is served at room temperature, so after you remove it from the
stove, you should wait for it to cool down a little. Sticky rice and raw veggies
commonly are served on the side, but it tastes great by itself as well.
Keep in mind that there are variations on this recipe—you can easily adjust it to
suit your tastes and the ingredients which you have available. But that is
exactly what makes it such a fun dish to prepare and enjoy. Once you learn the
basics, you can make it just how you like it!

For those who embarking for new spiritual
horizons, the temples of Myanmar call with a
timeless voice of ancient wisdom and custom.
Visiting these sublime golden temples is a
marvelous experience, whether one is in search
of stunning architecture or is in search of
enlightenment and uplift. Nonetheless, many
tourists are nervous setting foot inside these
hallowed halls. What is appropriate to wear?
What are the customs?
Taking effort to observe the time-honored
customs of Myanmar’s temples shows respect
to those who contemplate, meditate, and pray
here—and also sheds light on ancient
traditions. Here is everything you need to
know to plan your own visit.
• Always take off your shoes before you step inside a temple in Myanmar. You are also expected to
remove your socks. A good ideas is to wear sandals, because then you do not need to worry about
your socks, and you can take your shoes on and off quickly and easily. A small bag or backpack is
useful for carrying your sandals as you explore the temple.
• Wear long pants or a long dress or skirt, not shorts or a short skirt. While T-shirts are
acceptable, it is better to wear long sleeves as well, covering your arms at least down below your
elbow. No matter what, covering your shoulders is a must. While you may wear western clothing,
the locals do always appreciate the effort of wearing Burmese clothes. Learning to speak some
basic words and phrases in Burmese is also seen favorably, and can help you learn more about the
culture.
• Hats are acceptable in the bright sun, but should be removed when possible. Because the
weather can be very hot, you should make sure that the clothing you wear is lightweight and
breathable. You may want to bring a water bottle in your pack as well.
• You can shoot photographs
of temples without asking
(usually—some sites require
that you pay a fee for this),
but you should not point a
camera at a monk without
permission.
• If someone is meditating, do
not interrupt (whether they
are a monk or not). It is
important not to touch
anyone without their
permission—especially their
heads, as the head is
considered holy. Also do not
step on anyone’s shadows (for
a monk in Myanmar, his
shadow is seen as a part of his
person). If you are a woman,
you must never touch a monk
for any reason, including by
accident. Otherwise the monk
must observe a cleansing
ritual.
• Keep your noise levels down,
do not engage in public
displays of affection (even
hand holding), and do not
behave in a rowdy fashion.
Remember, these are holy
places you are visiting, even if
you came to see the
architecture. You should treat
religious iconography (like
Buddha images and statues)
with respect. Also mind what
you do with your feet. When
you sit down, you should try
and tuck your feet under you.
Do not point them at anyone,
and do not allow them to
point toward religious icons
either. You also should not
point with your hands.
• If you are meeting a monk,
you should know that monks
generally do not appreciate
handshakes. A more
respectful alternative is to
perform the gadaw, where you
place your palms together and
bow. If you sit down and a
monk is seated nearby, sit at a
lower level, not a higher one.
If you address a monk who is
sitting and you are standing,
sit before speaking. Since
monks do not eat after noon,
you should not offer them
food or partake of food in
front of them past the noon
hour.
• Do leave a donation. It is
always good to support the
temples and the monks, and
a chance for you to give back
to a special place that has
given you an experience you
will always remember. Give
your money to a lay person
(not a monk) who has been
entrusted with the task of
collecting such donations.
It takes patience and care to observe the important customs and
rituals for visiting Myanmar temples and interacting with the monks
who meditate there. But by doing so, travelers can gain insights into
Myanmar culture and religion while immersing themselves even
more deeply into the spiritual marrow of this devout land.

SUNSET CRUISE IN LUANG PRABANG
A Voyage of Dreams
Whenever I have visited Luang Prabang, I have
always been entranced by the beautiful Mekong
River, called the “mother of waters.” The
river’s majesty cuts a gorgeous pathway
through the region, sculpting magnificent
landscapes. It also weaves a path through the
daily lives of the locals of northern Laos,
inspiring myths and legends and evoking awe.
So when I had an opportunity to take a slow
boat up the river, it was a chance I was not
going to miss.
The boat I took was a luxury vessel, designed
to offer an experience that is quiet, serene, and
authentic, away from the crowds of
backpackers and the noisy families which tend
to crowd up other boats. It seemed like such a
romantic, old-fashioned way to see the
countryside—but I could never have imagined
before I embarked on my journey just how
magical it was going to be.
When I stepped onboard, I was immediately
impressed by how spacious the boat was—and
it wasn’t crowded at all. The passenger list
was strictly limited, and there was plenty of
room to spread out. As it was, I had a great
time chatting with some of the others and
getting to know them and their stories along
our journey.
The boat itself was absolutely amazing—
polished wood, carved railings, and cozy
cushions and pillows made for an elegant trip
up the river. My cruise took me up to stunning
Pak Ou Caves and back. The scenery along the
way was captivating, and I got to see it from
the river in a way that would never have been
possible on the roads. Along the shores, I could
spot traditional villages, and now and again,
we passed alongside fishermen in longboats.
At one point, we stopped at a beautiful spot to
enjoy snacks and drinks on the sand, and I was able
to kick back and lounge in a comfy chair and enjoy
the tranquillity of it all. I truly felt like I had
escaped from the cares and chaos of the world and
wandered into a dream.
I should mention if you are not familiar with the
Pak Ou Caves, they are a spiritual destination which
contain hundreds of Buddha images. I will say that
I loved the caves, but like many others who take
this particular pilgrimage, I too felt that the
journey was more than the destination. Of course,
that in itself is perhaps the essence of any spiritual
journey.
In fact, every aspect of this trip felt like it was
infused with spiritual uplift. The cruise company
makes sure you are well fed and set for a
comfortable trip, so my only advice to you if you
decide to go on your own slow boat trip is just to be
there in the present and soak up every minute of
your journey. Meet the locals on shore, take in the
scenery, and let the whole experience invigorate
your soul.
The most amazing part of the trip was sunset. As
the lantern of the sun dipped down behind the
hills, the river blazed with light, reflecting gold,
orange, and crimson, resplendent with the fading
hues of the day. Catching in the clouds, the sun
seemed to set them on fire. The entire world was
drenched in color.
When I disembarked from the slow boat at the end
of the cruise, all I could think of was how the time
had flown by. While I was on the boat, it was very
peaceful and relaxing, and I savoured each
moment—but after it was over, all I wanted was to
climb back onboard and journey further along the
Mekong.
There really is no one experience I can share that
captures the magic of my Mekong cruise. It was in
all the small things along the way—the soft
whisper of the breeze in my hair, the smiles of
village children waving from the shore, the sand
under my toes when we stopped to eat, the way the
sunlight danced on the river. All I can say is that
you have to experience it for yourself, and once you
do, it will infuse your soul with enchantment you
will never forget.

The first time I ever went traveling on my own, I had a brand new camera and I was
so excited to take pictures of my trip. I was on a tour of Vietnam, and it seemed
to me like the photos would take care of themselves. Such beautiful destinations
had to make for amazing photos, right?
It turned out that wasn’t the case at all; my photos really didn’t capture the magic
of the trip. Ironically, it was then that I fell in love with photography. I already
loved travel, and I was determined to learn to take professional-quality shots.
Since then, I have traveled every year, and each year, I have taken my camera and
brushed up on my skills. I’m now at the point where I am putting together a book
of my travel photos. And to celebrate that, I want to share some tips and tricks
with you to help you take photos like the pros on your vacation.
1. USE THE RULE OF
THIRDS AND LEADING
LINES FOR COMPOSI-
TION.
First of all, learn about
composition. One of the
key principles is the rule
of thirds. When you hold
up your camera, split the
frame into thirds
horizontally or vertically in
your mind. Use those
lines to distribute
elements like land and sky
(or sea and sky) and to
position objects.
Also useful are leading
lines. These are lines
which “guide the eye”
toward a subject. Roads,
streets and architectural
elements all make for
great leading lines.
2. FOCUS ON THE UN-
EXPECTED.
Instead of taking the
exact same photo of a
temple as everyone else,
why not look for a unique
angle? If you are
fascinated by a particular
relief, take a shot of that
instead. Or focus in on a
beautiful fall leaf or a
cherry blossom, with the
temple in the background.
These make for unique
shots, and they help
remind us of the precious
details of our trips.
3. SHOOT PHOTOS IN
THE LATE AFTER-
NOON.
Having difficulties with
lighting? Plan to shoot
in late afternoon. Light
at this time of day is
magical: it is bright
enough to give you
sharp, clear images, but
lacks the harsh glare of
mid-afternoon. It
infuses your shots with
warmth, and it provides
plenty of intriguing
shadows and contrasts.
4. GET A POLARIZING FILTER TO USE.
This one filter can utterly transform your photos simply by
removing unwanted reflections. The result is stunning color
saturation, breathtakingly clear water, and a lot less glare off
of foliages and other surfaces. This is an absolute must if you
want to capture the crystalline waters around Thailand, Mal-
dives and Indonesia.
5. TELL A STORY THROUGH YOUR
PHOTOS.
Here is one last tip, and this one is not technical.
The purpose of your photos is twofold—to capture beau-
tiful shots and to capture memories. So make sure your
photos are telling a story about your trip, weaving a narrative
through unique moments caught in time. Photos like these
convey a sense of place and embody the spirit of a location and its
people. Don’t just take pictures of the big iconic
attractions—take shots of the special moments which have a personal
impact on you.
It takes time, dedication, and lots and lots of shots to
become great at photography. Practice in your local area.
Play with these tips, tricks and ideas, and
watch as your photographs improve. When
