Executive!Summary:!
In!order!to!lead!successful!and!decent!lives,!adolescents!must!have!knowledge!of!healthy!diets!
and!have!access!to!resources!for!prospective!career!opportunities.!The!problem!is!that!
dispossessed!students!in!Santa!Cruz!County!are!not!able!to!reach!their!educational!and!health!
goals!due!to!lack!of!resources,!specifically!technology!and!food!education.!What!is!being!done!
for!our!nation’s!poorest!youth!is!not!meeting!the!current!demands!of!our!society.!They!are!not!
seen!as!priorities!in!the!eyes!of!our!educators,!upAtoAdate!on!technologies,!and!to!make!matters!
worse,!they!are!improperly!fed.!That!is!why!it!was!my!goal!to!create!a!program!to!teach!lowA
income!students!at!Mission!Hill!Middle!School!in!Santa!Cruz!both!technology!and!cooking!skills!
with!the!intended!impact!of!allowing!students!to!be!empowered!with!the!educational!skills!and!
confidence!to!be!able!to!become!responsible,!productive!adults.!
!
The!need:!
In!order!to!function!properly!in!school!and!society,!it!is!crucial!for!teenagers!to!lead!
nutritionally!and!professionally!secure!lives.!This!includes!both!education!on!what!a!balanced!
diet!consists!of!and!access!to!fruitful!career!development!opportunities.!However,!our!
societies’!underprivileged!youth!are!living!in!homes!where!food!insecurity!is!common!and!there!
is!little!access!to!budding!careers!in!the!technology!field.!In!order!to!obtain!the!best!benefits!
from!both!technologies!and!nutritional!education,!it!is!best!to!introduce!them!to!adolescents!
while!they!are!in!middle!school,!before!they!are!expected!to!live!on!their!own!and!enter!the!
career!field!!(Beckmann).!
!
Clearly,!in!order!to!lead!successful!and!responsible!lives,!adolescents!must!have!knowledge!of!
nutrition!and!have!access!to!resources!for!career!opportunities.!!
!
The!problem:!
Low!income!children!are!nine!times!more!likely!to!repeat!a!grade,!four!times!more!likely!to!
drop!out!of!school,!three!times!more!likely!to!be!placed!in!a!special!education!program,!and!
two!times!as!likely!to!score!lower!on!standardized!tests!than!their!more!mainstream!peers!
(Academic!Support!of!Homeless!Children!and!Youth).!The!levels!of!significant!difficulty!that!low!
income!students!face!in!school!impacts!their!chances!of!attending!college!and!probabilities!of!
success,!making!them!more!prone!to!being!homeless!or!impoverished!as!an!adult.!While!
programs!are!set!in!place!to!help!lowAperforming!students!in!school,!clearly!not!enough!is!being!
done!for!our!nation’s!poorest!children.!
!
As!our!country's!occupational!structure!currently!stands,!computer!and!Internet!literacy!top!the!
lists!for!most!crucial!abilities!employees!need!to!be!equipped!with!in!order!to!have!a!successful!
and!prosperous!career.!This!comes!in!many!forms!such!as!app!development,!coding,!and!other!
Internet!technologies.!
!
!
However,!those!who!even!have!access!to!Internet!in!the!U.S.!varies!drastically!depending!on!
one’s!financial!bracket.!Out!of!those!who!make!less!than!$30,000!per!year,!only!57%!of!them!
have!access!to!Internet.!This!number!drastically!jumps!when!you!look!at!the!80%!of!people!who!
have!Internet!access!who!make!between!$30,000!and!$49,999!per!year!and!the!95%!of!people!
who!have!Internet!access!who!make!$75,000+!per!year!(Jansen).!Clearly,!the!number!of!people!
who!have!access!to!Internet!directly!reflects!one’s!income.!Therefore,!it!is!safe!to!assume!that!
those!who!are!at!the!lowest!financial!bracket!would!have!substantial!difficulties!accessing!the!
Internet!and!other!technologies!that!are!becoming!so!significant!in!our!society’s!functioning!
and!job!market.!!
!
The!city!of!Santa!Cruz,!with!its!high!cost!of!living,!is!very!well!known!for!its!dense!homeless!
population.!Over!the!last!decade,!the!number!of!homeless!in!Santa!Cruz!County!was!at!an!all!
time!high!of!3,239!in!2000!and!3,371!in!2005!(McCord).!Many!theorize!that!this!is!because!in!
Santa!Cruz!County,!a!fullAtime!worker!must!earn!$33.27!per!hour!in!order!to!afford!an!average!
twoAbedroom!rental!(McCord).!Whatever!the!reason,!Santa!Cruz!seems!to!be!laden!with!people!
who!cannot!afford!a!home.!!
!
While!the!numbers!today!are!slightly!lower,!they!are!once!again!creeping!up!to!their!former!
heights.!Homelessness!in!Santa!Cruz!County!increased!from!2,265!in!2009!to!2,771!in!2011,!a!
20%!increase!(McCord).!The!number!of!people!under!25!living!on!the!streets!of!Santa!Cruz!has!
increased!as!well,!from!34!in!2009!to!99!in!2011,!a!98%!increase!(McCord).!To!make!matters!
worse,!17%!of!the!homeless!individuals!in!Santa!Cruz!have!children!(Homelessness!Facts).!
However,!not!all!homeless!children!in!Santa!Cruz!are!still!connected!with!their!families.!In!fact,!
in!2011,!there!were!88!unaccompanied!children!homeless!children!in!Santa!Cruz!(Applied!
Survey!Search).!This!puts!the!children!at!risk!for!developmental,!health,!and!educational!issues.!
Even!so,!many!do!not!take!action!on!this!issue.!
!
Health!impacts!every!aspect!of!a!person’s!life!chances.!This!is!especially!true!for!the!youth!of!
our!nation!who!need!proper!nutrition!to!develop!not!only!physically!but!academically!as!well.!
“FoodAinsecure!children!show!smaller!gains!in!math!and!reading!achievement…!and…!a!higher!
likelihood!of!repeating!a!grade,”!(Child!Trends!Data!Bank,!pg.!2).!Equally,!not!having!access!to!
nutritious!food!impacts!a!teenager's!health!more!than!one!would!expect!as!well.!“One!study!
suggested!that!if!a!family!has!experienced!food!insecurity!at!any!point!during!a!child’s!toddler!
years,!the!child!is!3.4!times!more!likely!to!be!obese!by!the!time!they!are!4!1/2!years!old,”!(Grief,!
Lee!2008).!!
!
In!Santa!Cruz!County,!15.7%!of!the!children!are!currently!in!poverty!and!almost!3,500!out!of!its!
roughly!57,500!children!are!obese!(2010!Santa!Cruz!County!Nutrition!and!Food!Insecurity!
Profile).!Similarly,!34%!of!students!at!Mission!Hill!Middle!School!are!considered!
‘socioeconomically!disadvantaged’!and!only!21%!of!students!meet!the!standards!for!the!
California!Fitness!Test!(Data!Almanac).!!Per!the!statistic!in!the!paragraph!above!that!states!the!
correlation!between!food!scarcity!and!childhood!obesity,!it!is!obvious!that!the!level!of!obese!
children!in!our!county!has!a!relationship!with!insecurity!of!food!that!these!families!are!facing.!
This!is!because!when!poor!families!are!forced!to!eat!food!that!is!provided!to!them!for!little!to!
!
!
no!money,!their!idea!of!a!wellAbalanced!meal!becomes!skewed.!For!example:!in!a!case!study!in!
2012!of!over!800!people!who!were!living!in!poverty!in!Sacramento,!25%!responded!that!they!
thought!that!chips!and!hotdogs!qualified!as!a!healthy,!sensible!meal!(Hamm).!This!way!of!
thinking!and!lack!of!nutrition!education!is!what!leads!to!obesity!among!our!nation’s!poorest.!!
!
In!short,!the!problem!is!that!dispossessed!students!in!Santa!Cruz!County!are!not!able!to!reach!
their!educational!and!health!goals!due!to!lack!of!resources,!specifically!technology!and!food!
education.!!!
!
What!is!currently!being!done:!
!
Technology*
UC!Denver!has!recently!conducted!a!study!that!identified!that!20%!of!impoverished!children!do!
not!attend!school!(Homeless!Children:!America’s!New!Outcasts).!Stanford!researchers!have!also!
done!a!survey!in!nearby!Santa!Clara!County!to!determine!how!the!staff!at!public!schools!felt!
about!dealing!with!issues!of!lowAincome!and!homeless!students.!They!found!that!the!staff,!
forced!to!deal!with!a!number!of!other!social!problems,!did!not!place!giving!these!students!aid!
at!the!top!of!their!agenda!(Homelessness!Can!Rob!Children!of!Childhood).!To!make!matters!
worse,!these!children!are!also!being!skimped!out!on!with!curriculum.!Only!10%!of!our!country’s!
schools!teach!technology!courses,!and!these!are!usually!reserved!for!the!most!privileged!
children!(Zuckerberg,!Bill!Gates).!Therefore,!it!crucial!for!outside!organizations!to!take!on!the!
responsibility!of!raising!low!income!children!to!be!at!the!same!educational!level!as!their!peers!
in!order!to!ensure!an!equal!opportunity!at!obtaining!success.!!

Nutrition*
Many!counties,!such!as!Santa!Cruz!County,!assume!that!food!stamps!and!free!lunch!programs!
are!enough!to!meet!the!nutritional!needs!of!our!county’s!youth.!While!these!programs!are!put!
into!place!in!order!to!help!families!feed!their!children,!they!are!simply!ineffective!due!to!
outside!circumstances!and!flaws!in!their!systems.!
!
For!example,!the!Santa!Cruz!County!Food!Bank!comments!that!there!are!many!people!who!do!
not!qualify!for!food!stamps!in!Santa!Cruz!County!because!their!income!is!too!high,!however!
they!still!struggle!to!feed!their!families!due!to!the!exceedingly!high!cost!of!living!in!Santa!Cruz.!
Another!issue!that!this!organization!brings!up!is!the!fact!that!even!those!who!do!receive!food!
stamps!often!find!that!it!is!not!enough!to!last!them!until!the!end!of!the!month.!This!is!because!
the!benefits!average!less!than!$1.50!per!meal,!per!person,!and!most!people!do!not!know!how!
to!buy!adequate,!balanced!meals!on!this!budget!(The!Food!Bank).!Because!of!this,!many!have!to!
turn!to!food!distribution!programs!such!as!the!Food!Bank!and!various!soup!kitchens!in!order!to!
make!ends!meet.!However,!even!with!these!resources,!1!in!5!children!living!in!poverty!are!
forced!to!skip!one!or!more!major!meals!per!day!(breakfast,!lunch,!or!dinner)!because!their!
parents!cannot!supply!them!with!food!!(The!Telegraph).!On!top!of!these!issues,!there!is!really!
no!system!put!into!place!to!teach!children!how!to!utilize!these!provided!resources!in!order!to!
create!healthy!meals,!especially!provided!with!such!a!meager!budget.!

What!is!being!done!for!our!nation’s!poorest!youth!is!not!meeting!the!current!needs!of!our!
society.!They!are!not!seen!as!priorities!in!the!eyes!of!our!educators,!upDtoDdate!on!
technologies,!and!to!make!matters!worse,!they!are!improperly!fed.!!

Goals!and!Objectives!
Stephanie!Coontz’s!created!a!twoAstep!method!for!successful!“at!risk!youth”!in!her!book!The!
Way!We!Really!Are:!Coming!To!Terms!With!America's!Changing!Families.!As!Coontz!explains,!
when!dealing!with!these!children,!“contrary!to!some!liberal!myths…!the!answer![doesn’t]!lie!in!
offering!workshops!on!selfAesteem!or!teaching!kids!to!‘celebrate!yourself’”!(pg.!173).!Instead!it!
is!important!that,!first,!these!children!get!a!“chance!to!succeed!at!something”!(pg.!173).!“The!
second!is!the!intervention!of!just!one!caring!person!from!outside!the!family,”!(pg.!173).!

With!that!in!mind,!overall!goals:!
1. Create!a!space!where!children!have!the!chance!to!amplify!their!skills,!feel!successful,!
and!build!their!confidence.!!
2. Create!a!feeling!of!mentorship!within!the!program.!!

2. Students!understand!the!basics!of!nutrition!

Impact:!
The!intended!impact!of!this!program!is!for!students!to!be!empowered!with!the!educational!
skills!and!confidence!that!they!will!be!able!to!provide!from!themselves!and!become!a!successful!
adult.!This!will!hopefully!encourage!them!to!graduate!high!school!and!pursue!higher!education!
or!enter!the!workforce.!This!would!allow!them!to!break!a!cycle!of!generational!poverty!and!
homelessness!and!make!them!more!likely!to!have!a!fruitful!life.!!

Processes/actions!for!achieving!target!outcomes!and!goals:!
Best!practices!in!atArisk!education!call!for!involving!students!in!extraAcurricular!educational!
activities!(National!Center!for!Homeless!Education).!According!to!the!NCHE!extracurricular!
activities!“can!provide!students!with!a!sense!of!belonging,!stability,!pride,!and!responsibility!
and!strengthen!a!student’s!applications!for!higher!education!admission!and!scholarships”.!
Poverty,!however,!can!often!create!barriers!to!participation!in!these!activities.!Therefore,!the!
correct!action!for!achieving!my!desired!outcome!and!goals!of!empowering!students!to!do!well!

in!higher!education!begins!with!creating!an!internship!and!learning!opportunity!that!has!the!
student’s!needs!at!the!heart.!!

Timeline!of!Project:!
This!course!was!ten!weeks!long!for!almost!two!hours!per!class.!It!ran!from!September!23rd
!–!
December!3rd
!every!Wednesday!from!1:15pm!–!3pm.!Originally,!I!had!anticipated!having!five!
days!of!cooking!and!five!days!of!coding.!However,!since!we!needed!more!time!to!attempt!to!
make!progress!in!our!coding!efforts,!we!only!completed!four!cooking!classes.!Please!see!Part!II!
for!a!more!detailed!explanation!of!my!timeline.!

Maintaining!Project:!
I!have!documented!my!process!thoroughly!in!order!to!be!open!to!the!possibility!of!passing!this!
project!down!to!a!fellow!Everett!student.!I!have!also!developed!great!rapport!with!the!Mission!
Hill!staff,!which!would!be!willing!to!hire!an!Everett!student!to!continue!this!program!in!the!
future.!Lastly,!I!have!opened!the!door!for!future!funding!for!this!project!(Please!see!Appendix!A:!
Important!People!and!Agencies).!!

Evaluating!accomplishment!of!objectives:!
Seeing!as!the!intended!purpose!of!this!program!was!to!ensure!that!students!are!comfortable!
using!technology!and!cooking,!the!way!to!determine!success!of!accomplishing!goals!was!to!
identify!how!students!felt!about!cooking!and!technology!before!and!after!the!program.!Please!
see!Part!IV:!Evaluations!for!these!results.!

Modification!of!processes!and!methodology:!
After!the!program,!I!took!a!couple!weeks!to!analyze!the!results!from!the!surveys!as!well!as!from!
a!debriefing!session!with!the!students!at!the!end!of!the!class.!I!used!these!to!determine!what!
the!students!learned!and!what!they!suggested!we!change.!The!idea!behind!this!is!to!
consistently!serve!the!needs!of!the!students!rather!than!solely!our!own!vision.!Please!see!Part!
IV:!Evaluations!for!more!information!on!what!came!from!this!process!and!suggestions!on!how!
to!modify!the!program!based!on!these!results.!!

Methods:!!
Survey!
Each!student!completed!a!printed!survey!to!assess!student’s!feelings!about!their!future,!
cooking!abilities,!and!technology!skills.!Most!questions!were!asked!on!a!5Apoint!Lickert!Scale.!
The!same!survey!was!given!to!each!student!on!week!one!as!well!as!at!the!end!of!the!program.!

Project!Write!Up:!
Mission!Hill!Middle!School!was!the!first!pubic!school!in!Santa!Cruz!County.!It!has!about!600!
students!ranging!from!grades!6!through!8.!This!program!was!ran!through!their!Arts!Academy!
Program!that!happens!two!times!per!year!for!ten!weeks.!This!course!was!taught!each!
Wednesday!for!2!hours!from!September!24th
!to!December!3rd

designed!for!15!lowAincome!students!and!was!split!between!teaching!basic!nutrition!and!
technology!skills.!The!students!in!this!course!are!now!able!to!not!only!create!delicious!healthy!
meals,!but!they!were!also!able!to!start!creating!a!food!blog!using!the!basic!HTML!and!CSS!skills!
that!they!were!taught.!!

Cooking:!!!
In!these!kitchens,!students!were!taught!nutrition,!analyzing!food!sources,!writing!recipes,!and!

proper!cooking!techniques.!This!was!done!in!order!to!give!the!students!the!skills!of!being!able!
to!produce!creative,!quality,!and!nutritious!foods!using!the!available!resources!regardless!of!
budget.!!
Technology:!
Students!then!used!the!skills!that!they!learned!from!cooking!to!create!a!recipe!blog!using!basic!
HTML!and!CSS!skills.!This!specific!technology!was!chosen!because!it!requires!no!previous!coding!
experience,!can!be!taught!easily,!and!provides!an!excellent!format!for!a!recipe!blog.!The!blog!
included!much!of!the!information!that!the!students!learned!during!the!cooking!program!
including:!advice!on!how!to!eat!healthy!on!a!budget,!nutritional!information,!and!recipes!that!
they!created.!!!

Narrative!
What!background!research!did!you!do?!
In!writing!the!project!proposal,!I!looked!into!the!demographic!information!of!both!the!city!of!
Santa!Cruz!and!Mission!Hill!Middle!School!in!particular.!I!focused!on!the!current!socioeconomic!
crises!that!desolate!families!are!facing.!I!also!did!intensive!research!regarding!the!absence!of!
lowAincome!and!minority!students!in!the!subjects!of!science,!technology,!engineering,!and!
mathematics.!For!my!own!purposes,!I!wrote!a!literature!review!based!on!my!findings.!Please!
see!Appendix!I!for!my!literature!review!and!Appendix!J!for!the!resources!that!I!utilized!for!my!
background!research.!!

How!was!your!project!funded?!
I!was!very!successful!in!funding!as!I!was!able!to!get!$500!in!funding!from!Bread!for!the!Journey:!
Santa!Cruz!County.!They!also!have!promised!me!$500!in!funding!for!future!projects!in!order!to!
keep!my!efforts!sustainable.!
!
How!does!your!organization!use!ICT?!
Mission!Hill!Middle!School!has!no!formal!implementation!of!computer!science,!web!design,!
engineering,!or!any!other!ICT!program.!However,!they!do!welcome!these!types!of!programs!
into!their!after!school!program:!Arts!Academy.!It!is!really!up!to!the!instructors!of!Arts!Academy!
to!decide!which!subject!they!would!like!to!teach!and!hence,!there!is!usually!a!wide!variety!of!
subjects!offered!and!they!are!always!changing.!Classes!this!year!ranged!from!Bike!Club!to!
Yearbook.!There!were!other!courses!offered!this!semester!that!focused!on!technology!skills!
such!as!Graphic!Design!and!Minecraft.!ETR!Associates!have!also!run!Game!Design!courses!
during!the!Arts!Academy!in!previous!years.!

What!was!your!strategy!for!capacity!building!or!training?!
In!terms!of!ICT,!I!wanted!the!students!to!really!take!ownership!of!their!newfound!skills.!During!
the!scaffolding!and!original!teaching!of!the!materials,!I!allowed!students!to!create!websites!
about!whatever!subjects!interested!them!the!greatest.!This!really!provided!a!platform!for!
students!to!become!invested!in!the!technology!and!be!eager!to!create!their!own!unique!pieces!
of!work.!We!then!later!planned!to!use!these!skills!to!create!the!final!product:!a!cooking!blog.!I!
!
!
also!ensured!that!students!had!readily!available!access!to!both!basic!reference!and!more!
advanced!materials!in!order!to!keep!up!at!their!own!pace.!!
!
What!aspects!of!Everett!training!were!particularly!useful?!
The!technology!training!that!I!got!by!being!part!of!the!Everett!Program!made!this!entire!project!
possible.!Having!been!taught!this!material!firsthand!in!a!very!easyAtoAunderstand!and!
approachable!way!made!it!much!easier!to!create!my!own!curriculum.!Also,!understanding!the!
social!importance!of!access!to!technology!that!I!learned!through!the!30!series!is!what!made!this!
project!worthwhile.!Lastly,!strong!connections!with!Fellows!and!access!to!the!Technology!
Director,!Thomas!Gelder,!were!essential!to!my!completion.!!
!
Recommendations!for!the!organization:!
Include!the!Arts!Academy!teacher!in!the!recruitment!process!of!the!students.!While!this!course!
had!a!waitlist!with!interested!candidates,!only!those!who!were!considered!socioeconomically!
disadvantaged!were!allowed!admittance!into!the!course.!While!this!was!clear!and!was!reflected!
in!the!student!demographic,!not!all!students!actually!understood!the!topic!of!the!course.!Many!
did!not!realize!that!there!was!actually!coding!involved!and!instead!simply!thought!that!it!was!a!

pace!or!cut!out!unnecessary!material,!we!did!not!accomplish!our!goal!of!creating!

a. I!originally!planned!to!evaluate!the!students!at!each!step!of!the!way!by!grading!
their!work!according!to!rubrics.!While!that!sounded!great!on!paper,!when!the!

We!were!lucky!to!have!been!able!to!use!the!downstairs!kitchen!at!Mission!Hill.!While!it!is!a!bit!
dated,!it!was!a!decent!sized!space!and!had!plenty!of!counter!space!for!the!kids!to!cook!on!and!
storage!space!for!me!to!store!all!of!my!required!materials!in!between!classes.!It!also!had!an!
electric!stovetop!and!oven.!The!size!of!this!kitchen!can!accommodate!about!fifteen!students!

I!was!originally!offered!the!use!of!the!computer!lab!at!Mission!Hill,!which!has!30+!highly!
functional!Macintosh!desktop!computers.!This!was!the!ideal!situation!as!they!had!the!correct!
programming!applications!(TextWrangler)!and!were!all!hardwired!to!connect!to!the!Internet!so!
the!chances!of!them!having!issues!connecting!were!slim.!There!is!also!an!IT!professional!on!staff!
at!Mission!Hill!to!help!run!the!computer!lab!and!solve!any!issues!that!we!might!have!run!across.!
However,!at!the!last!minute,!this!space!was!given!to!another!Arts!Academy!program.!Therefore,!
I!was!expected!to!run!the!coding!part!of!the!project!in!a!standard!classroom!with!the!use!of!
laptops.!

I!received!a!gracious!grant!of!$500!by!Bread!for!the!Journey,!Santa!Cruz,!for!this!project.!$400!
of!that!money!is!completely!sustainable,!as!I!have!used!it!to!buy!decent!quality!cooking!
materials!such!as!pots,!pans,!cutting!boards,!knives!etc.!for!the!kitchen.!I!have!decided!to!
donate!these!materials!and!am!allowing!them!to!stay!to!this!kitchen!so!they!can!be!used!if!

Importance of eating healthy
I asked the importance of eating healthy to the students both before and after the course to see if they held
eating healthy in any higher regard. This is the most broad category which indicates a general level of success
of the project. There was a very clear improvement on the student’s attitudes about eating healthy.

Interestingly, there was also an improvement in how students perceived the importance of their eating healthy
by their parents by the end of the class.

Similarly, another goal was for students to gain knowledge of healthy eating habits. There was obviously a large
improvement in these aspects and by the end of the class, all students felt familiar with this idea.

By the end of the class, every student felt as though they ate relatively healthy. In fact, not a single student
disagreed that they were eating healthy. This was a huge feat as it shows that the students began to
incorporate some of their newly found knowledge into their lives outside of the class.
Comparisons of eating habits
I chose two iconic examples of what is considered a “health food” (green salad) and
what is considered a “junk food” (pizza) and asked the students their eating habits
regarding both foods. These two foods are also readily available at the school for
lunch.
Before the class, only 62% of the students ate a green salad at least once per week.
After the class, that number jumped to 85%.
Similarly, 62% of students claimed to eat pizza at least once per week. By the end of
the class, only 31% of the students claimed to do so.
While this isn’t a perfect representation of health, it gives a direct representation of
the student’s claims that they are eating more healthy.

Familiarity with cooking

Another goal was for students to feel comfortable and confident while cooking. There was obviously a
large improvement in these aspects. In fact, not a single student claimed that they were unfamiliar with
cooking at the end of the class. This shows that they feel confident that they have gained basic
cooking skills. Oddly, though, less students claimed to be extremely familiar with cooking than at the
beginning of the class.
Cooking recipes found online

Another important feature of students feeling empowered to make their own food choices and cooking for
themselves is their willingness and skill to find and cook recipes on their own. I think this class was a great
stepping stone for students to get out of their comfort zone and experiment with new recipes, and I think the
data shows this.
Cooking for friends and family

While the confidence that students have gained from this course is fantastic, it is also crucial for them to put
these newfound skills to use in their everyday lives. The number for students who cooked for friends and family
at least a few times per week doubled from 3 to 6.
Choice in eating at home

Another interesting development is that students felt as though they had more choice in what they were able
to eat at home. Without too much speculation, I assume this is related to their feelings of empowerment that
comes from knowing how to cook for oneself.
Prepared to cook as an adult

One of my other main goals was to ensure that students felt prepared to cook for themselves as an adult in an
attempt to ensure that students are self-sufficient as adults. There was a sizeable improvement in their
confidence to cook for themselves when they are older, which is a huge success.

The great thing about HTML is that, while it is the building blocks of coding, it can easily be learned online. The
goal of this class wasn’t to simply transfer knowledge of HTML and CSS, but rather to build students’
confidence in their abilities with technology. By the end of the class, not a single student was not confident
with technology in general.

Similarly, a mark of success is for students to be able to leave this class with the confidence to learn new
technologies, as this is the only way that they will continue to build upon their skills. These was an
improvement in this aspect as well.

A key feature for students to continue down the path of learning new technologies is to identify as somebody
who works well with technology. This class was able to affirm these beliefs in many students.
Attitudes about computers

By the end of the class, the importance that students placed on being knowledgeable about computers grew
substantially, which is a great sign.

Interestingly, there was also an improvement in how students perceived the importance of their knowledge of
computers by their parents by the end of the class. As my previous research has shown, parent’s attitudes
about children’s skills and hobbies is a huge predictor in the child’s success in those areas (Coleman). So, for
students to perceive that their parents hold these skills in high regard is a big deal.
Working on digital media projects

There was also a substantial increase on how often the students worked on personal digital media projects (not
for school assignments). This shows that students are actively using technology more now that they have been
in this course.

● Make sure the students always have a voice in the class. I did this by:
○ Always presenting 2 recipes to cook and allowing the students to choose and making sure students
could easily customize those recipes to their taste
○ Take the children’s interests seriously. If you see them goofing off and looking at pictures of their
favorite celebrity, try to incorporate that into the class (allowing them to put their picture on their
website, for example)
○ Asking them their input on the curriculum (ex: how they incorporated healthy eating habits into
their day-to-day lives) in order to allow them to feel empowered by the course
● Learning about nutrition
○ There is a lot to learn about nutrition. Make sure it is easily digestible. Break it down into
categories for the children to wrap their heads around.
● Make the class as beginner friendly as possible
○ Explain the curriculum to students in a variety of ways. Make analogies, draw on the board, show
them pictures, show them step-by-step how to write the code, etc.
● Establish a relaxed atmosphere
○ I think part of the reason students found the class fun was because how relaxed the classroom was
Things to change
● Make sure the class is set-up with tested technology before the course begins
○ The last thing you want is for your computers to crash disallowing you to complete your lesson!
● Try to make the class split between cooking and coding as evenly as possible
● Have an assistant to help debug and handle general class management so the sole teacher doesn’t have
to stop teaching to fulfill these roles
● Ask Mission Hill (or wherever you’re at) to allow you to expand your course to however long you need it
for (I learned afterwards that they let other courses run for 12 weeks, which would have been perfect)
○ While no students complained about not finishing the website, it felt really unsatisfying to walk
away on the last day having not completed what we had originally set out to
● Be willing to be an authority figure when needed
○ While I said last page to develop a relaxed atmosphere, make sure you also show yourself as an
authority figure. One of the largest time wasters in this class was when students would goof off. It
took me longer than I would have liked to get these students on task, and I think part of that was
because I didn’t establish myself as an authority figure as much as I would have liked to

This!is!a!literature!review!that!I!wrote!regarding!my!project.!!!

Purpose!of!literature!review:!!
For!our!country!to!have!any!hope!keeping!up!with!growing!international!competition,!
each!member!of!our!future!generation!must!be!given!the!tools!to!reach!their!upmost!potential.!
This!is!especially!true!as!the!global!demand!for!highly!skilled!workers!in!the!areas!of!science,!
technology,!engineering,!and!math!(STEM)!surges!(Preparing).!However,!with!over!1.2!million!
students!who!drop!out!of!school!each!year,!the!professional!prospects!of!our!upcoming!
generation!are!discouraging!(Do!Something).!Exacerbating!this!issue!lays!a!dense!population!of!
at!risk!students!who!are!undoubtedly!being!underserved.!For!our!nation!to!prosper,!the!basic!
necessity!of!these!students!needs!to!be!adequately!addressed.!However,!the!unique!needs!of!
this!population!are!wildly!complex!issues!whose!solutions!are!not!widely!agreed!upon!and!
therefore,!cannot!be!tackled!by!general!reforms!alone!(Rodriguez,!323).!!
This!literature!review!will!be!examining!the!issues!that!atArisk!youth!face!regarding!
adequate!educational!opportunities!in!the!STEM!areas.!One!prevalent!philosophy!is!that!at!risk!
youth!simply!do!not!have!access!to!the!same!opportunities!as!their!more!mainstream!peers.!
Another!theory!is!that!there!is!a!general!lack!of!quality!in!our!educational!system,!especially!for!
students!who!fall!‘outside!of!the!norm’.!
!
Access!to!equal!opportunities:!
All,!regardless!of!race,!class,!or!financial!status,!should!be!entitled!to!a!fair!chance!at!
economic!and!personal!success.!Sadly,!even!from!the!most!fundamental!ages,!certain!
populations!are!given!inadequate!resources.!These!populaces,!known!as!“at!risk”!populations,!
are!commonly!those!who!have!poor!life!outcomes!generally!due!to!their!socioeconomic!status!
and/or!ethnic!background!(Child!Trends).!AtArisk!students,!in!particular,!are!in!danger!of!falling!
behind!or!dropping!out!of!school!entirely.!These!students!tend!to!excessively!lack!proficiencies!
in!most!subjects!and!even!more!severely!in!areas!such!as!science,!technology,!engineering,!and!
mathematics!(STEM).!Gloria!LadsonABillings,!in!her!2006!presidential!address,!focused!her!
attention!on!the!education!debt!that!we!accumulated!in!the!United!States!throughout!our!
history.!She!explained!that!in!2005,!8th
!grade!minorities!were!23!points!behind!their!white!
counterparts!in!English!and!26!points!behind!in!math!on!standardized!tests!(Achievement!Gap,!
4).!Yet,!LadsonABillings,!explains!that!purely!concentrating!on!raising!standardized!test!scores!
would!move!us!towards!shortAterm!solutions!that!do!not!resolve!the!underlying!issues!
(Achievement,!4).!
In!2010,!the!National!Science!Board!conducted!a!research!report!titled!Preparing!the!
Next!Generation!of!STEM!Innovators:!Identifying!and!Developing!our!Nation’s!Human!Capital.!
To!complete!this!report,!the!board!analyzed!previous!research!and!demographic!data!as!well!as!
consulted!a!wide!range!of!experts,!practitioners,!policyAmakers,!and!STEM!innovators!in!order!
to!identify!the!prospects!of!our!future!generation!of!STEM!pioneers.!They!have!found!that!
academically!skilled!individuals!who!can!be!identified!at!an!early!age!and!supported!in!their!
scholarship!produce!a!disproportionate!number!of!Fortune!500!patents,!peerAreviewed!STEM!
!
!
publications,!and!other!creative!achievements,!as!well!as!comprise!a!disproportionate!number!
of!tenured!academic!faculty!at!top!universities!(Preparing,!2).!
While!they!were!pleased!with!the!implications!of!these!findings,!they!were!also!
dismayed!by!the!rarity!of!this!occurrence!and!the!lack!of!access!to!suitable!STEM!resources!for!
many!students.!“Whether!this!group!of!students!has!access!to!appropriate!resources!seems!to!
be!an!accident!of!birth”!(Preparing,!5),!they!explain.!This!‘accident!of!birth’!is!not!characterized!
by!a!natural!born!gift!for!academics!as!one!might!think,!but!is!instead!directly!correlated!with!
one’s!economic!status.!“Consequently,!many!of!our!most!talented!and!determined!lowerA
income!students!and!minority!students!traditionally!underrepresented!in!STEM!are!never!
identified!or!given!an!equal!opportunity!to!realize!their!enormous!potential,!and,!therefore,!
constitute!a!considerable!source!of!untapped!talent,”!explains!the!National!Science!Board!
(Preparing,!13).!!
Just!years!ago,!this!might!have!been!seen!as!an!unfortunate!element!of!this!industry!and!
go!without!much!further!thought.!However,!the!National!Science!Board!explains!that!currently,!
foreignAborn!doctorate!holders!characterize!about!half!of!the!workforce!in!engineering!and!
computer!science,!37%!of!the!physical!sciences,!and!43%!of!mathematics!(Preparing,!21).!As!
globalization!continues!to!expand!and!international!demand!for!STEM!talent!surges,!we!cannot!
assume!that!these!individuals!from!abroad!will!continue!to!stay!in!America!and!contribute!to!
our!STEM!workforce!(Preparing,!21).!Instead,!we!need!to!start!frantically!building!our!own!
domestic!STEM!workforce,!and!we!certainly!cannot!afford!to!be!discriminatory!about!who!we!
permit!to!join!it.!Therefore,!they!insist!we!need!to!cast!a!wide!net!in!order!to!identify!students!
with!talent!in!the!STEM!areas!and!nurture!their!progress;!this!includes!lowAincome,!minority,!
and!atArisk!students!(Preparing,!3).!
Fred!Rodriguez!who!has!devoted!his!time!to!examining!current!and!past!national!
education!reforms,!expresses!his!dissatisfaction!with!the!present!reach!of!our!educational!
system.!These!programs!do!not!touch!the!heart!of!the!issue!that!are!facing!at!risk!youth!and!are!
therefore!leaving!a!large!portion!of!our!students!left!behind!(Rodriguez,!322).!Rodriquez!agrees!
with!the!concern!of!the!National!Science!board!and!stresses!that!unless!there!are!major!
changes!in!the!quality!of!American!education,!we!will!lose!our!competitive!edge!in!the!race!for!
