Glossary:
Adobo Sauce: A Spanish marinade sauce comprised of ground chilies, paprika,
oregano, salt, and garlic. Has a dried chili savory spicy smoky Mlavor.
Ancho Reyes: Dried chile liqueur. Sweet smoked spice.
Byrhh Quinquina: A Quinquina, coffee bean, bitter orange, and cocoa mix
aged in port wine. A sweet balance of fruits and spices.
Cascade Hops: One of the most popular ingredients in IPA beers. Lends the
hoppy bitterness that beer lovers have come to love.
Crème de Mure: Blackberry liqueur
Falernum: Rum based liqueur made with clove, allspice, lime zest, almonds,
and ginger. Commonly found in Tiki style drinks.
Hoja Santa Leaves: “sacred leaf” in Spanish. A leaf with notes of anise,
nutmeg, mint, tarragon, and pepper.
Padre Cola: House made syrup. Comprised of lime zest, lemon zest, orange
zest, nutmeg, cinnamon, citric acid, ginger, star anise, and vanilla beans.
Healthier and tastier than regular colas.
St. Elizabeth Allspice Dram: An allspice liqueur.
Salers: A bittersweet gentian root liqueur.
Shub: Bright fruit syrups made with vinegar. Popular during the colonial era
when refrigeration wasn’t available. The addition of vinegar would preserve
fruit syrups for months.
Sotol: Distilled spirit made from the “dessert spoon” plant in mexico. Earthy,
grassy, vegetal, Mloral, and delicious.
Strega: An herbal liqueur with hints of mint and fennel. Also the Italian word
for a group of witches. (none of our cocktails contain witches)
Tamarind: Sweet and Tart fruit grown in tropical regions.
Tincture: Alcohol based extraction of herbs, spices, or plants. Much like a
bitters.
