Among the city’s Michelin-starred restaurants is Usukifugu Yamadaya, which focuses on
pufferfish, which can be highly poisonous if prepared improperly. Chef Fumie Yamada’s
qualifications for preparing this delicacy as sashimi include a decade of training, as well
as a three-year apprenticeship. Pufferfish is also available at the restaurant prepared
deep-fried and as fugu chiri-zosui, or in a hotpot that includes rice and vegetables.
