Dr. Gerhard Eisenbrand
Professor Emeritus at the University of Kaiserslautern,
Department of Chemistry, Division of Food Chemistry
and Toxicology. His research has focused on
mechanisms of actions of (geno) toxic agents and
various anticancer agents, on metabolism and
biokinetics. It is laid down in close to 350 peer
reviewed scientific publications. Recent and current
research adresses interactions of food
constituents/contaminants with biomolecules. Within
the context of studies on food safety and on beneficial
versus adverse effects of food constituents relevant to
human health, it also encompasses human
intervention studies. He was long acting (1995 to
2013) chair of the Senate Commission on Food Safety
(SKLM) of the German Research Foundation ( DFG)
and is currently scientific president of ILSI Europe.
