foods contaminated with animal feces. Often, contaminated foods are
beef, poultry, milk or eggs
• To prevent salmonella:
-keep food stored at proper temperatures

3. Botulism
• Botulism that is usually caused by improperly canned foods
• How to prevent botulism:
- Avoid cans with dents and holes
- Boil home-canned foods for at least 10 minutes
4. E. coli 0157:H7
• undercooked ground beef, unpasteurized milk and juice, soft cheeses made
from raw milk, and raw fruits and vegetables
• Contaminated water, including drinking untreated water and swimming in
contaminated water
• How to prevent E. coli:
- Cook meat properly, especially ground beef
- Wash your hands after handling raw meat
- Use a different plate to bring cooked foods in from the grill
5. Staphylococcus
• Staphylococcus aureus, also known as staph, is a bacteria that can cause a skin infection
• harmless unless it enters the body through broken skin
• How to prevent staph:
- Keep your hands clean. Frequent hand washing is the most effective way to
prevent staph infections.
- Cover all open wounds
- Closely monitor open wounds for signs of infection, which includes redness and
pus.
- Don't share items used for personal hygiene
6. Hepatitis A
• Hepatitis A is a contagious liver disease caused by exposure to the hepatitis A virus
• See a doctor and get vaccinated
• Hepatitis A is transmitted by ingesting fecal matter, even in very small amounts
• Be particularly careful and wash your hands thoroughly if you have come into contact with the
following:
Public diaper changing tables
Portable toilets
Other areas where fecal matter may be present
• Be aware of foods and water in countries where hepatitis A is common or in areas where there is
poor personal hygiene
7. Norwalk virus
• People who are affected by the Norwalk virus experience vomiting, nausea, diarrhea
and cramps
• There is no drug to treat people who are infected
• Get plenty of rest, drink a lot of fluids and wait it out
• Norovirus illness can cause severe diarrhea and vomiting, which in turn can cause
dehydration because your body is losing so much water

- washing your hands often
- wash linens and clothes that may be infected with the virus
