A note to the reluctant chef, all of the green leafy vegetables juice well including the beets and the celery. The exception: artichokes, green cabbage and kohlrabi. An easy preparation for artichokes is cooking them for about 30 to 40 minutes and then dipping the rich flesh of the leaves and “the heart” in a balsamic dressing laced with garlic. Green cabbage can be eaten as coleslaw or fermented to make incredibly healthy sauerkraut. The probiotics of fermented foods have important healing properties. Especially after being on antibiotics, consider replenishing your intestinal flora with fermented foods. It is high in potassium, vitamin C (it contains more than strawberries, orange juice and melon), and also high in dietary fiber yet very low in saturated fats and cholesterol. Kohlrabi can be eaten raw cut into wedges with a dash of lemon juice and sea salt, or grated and added to your salad, or you can steam the slices and add a bit of olive oil and garlic when done.
