Quick Fact file<br />The official languages are English and French<br />They are a republic<br />The area is  475,442 km2<br />Cameroon holds 1.3% of the worlds water<br />The capital is Yaoundé<br />The population is (July 2009 estimate) 18,879,301<br />They have a President and Prime Minister <br />The average temperature is 26°C, some places can get up to 9 m of rain a year<br />
  5. 5. Many recipes show what Cameroon is about, but these are some classics:<br />
  6. 6. African Fool<br />Make the custard from the first three ingredients:<br />Heat the milk in a saucepan over low heat.<br />In a bowl, mix the half cup of sugar into the beaten eggs. Slowly add about a quarter of the heated milk to the egg-Sugar mixture, while stirring continuously.<br />Slowly stir the egg-sugar-milk mixture into the remaining heated milk. Cook on low heat, until it thickens into a custard, stirring gently and continuously.<br />Spoon it into a clean bowl and place in the refrigerator to cool.<br />While the custard is cooling, cook the mangoes:<br />Bring the water and three tablespoons of sugar to the boil.<br />Add the mango pieces. Reduce heat and cook until tender, 5 to 10 minutes, stirring occasionally. Mash the mango, or press it through a sieve.<br />Spoon it into a clean bowl and place in the refrigerator to cool.<br />2 cups milk<br />2 eggs, lightly beaten<br />1/2 cup Sugar<br />3 tablespoons water<br />3tablespoons Sugar<br />2 mangoes, peeled, and cut into pieces<br />

DG Chicken<br />Directions<br />Cut the Chicken into small pieces and season to taste.<br />Fry the Chicken in palm oil<br />Meanwhile, peel and chop the plantains and fry them.<br />Cut all the vegetables into small pieces and then wash and drain. (Make sure you remove the seeds from the chillies)<br />Put all the chopped vegetables in a pan, together with the fried Chicken. Add garlic, ginger and a cup of water and place under medium heat.<br />Simmer for 10 minutes.<br />Add the fried plantains and simmer until no water remains in the pan.<br />Add some oil and let cook for a further 2–3 minutes.<br />Serve hot.<br />1 Chicken<br />4 plantains<br />4 tomatoes;<br />2 leeks<br />3 sweet peppers<br />3 carrots<br />1 garlic clove<br />ginger;<br />parsley<br />celery<br />palm oil<br />salt and pepper to taste<br />Plantains<br />
