There is as well a wonderful benefit that the Greek diet provides, whether you eat meat or are vegan: it is arguably the healthiest diet on the planet as well as user-friendly to those who want to eat well while not having to worry about putting on weight. </li></ul>

It begins with Swanson Certified Organic Beef Broth and is seasoned with thyme, garlic and mushrooms. With the addition of sirloin steak, this soup delivers a tasty, filling meal in every spoonful.     </li></ul><ul><li>Prep time is 20 minutes, and cooking time is 40 minutes. How to make Hearty Beef Barley Soup <ul><li>1-1/2 lbs. stew beef, cut into bite-sized pieces </li></ul><ul><li>1 cup each chopped carrots, chopped celery and chopped onions </li></ul><ul><li>1 cloves garlic, minced </li></ul><ul><li>4 teaspoons beef broth mix </li></ul><ul><li>7 cups water </li></ul><ul><li>1 cup canned tomato sauce </li></ul><ul><li>2/3 cup pearl barley </li></ul><ul><li>1-1/2 teaspoons marjoram </li></ul><ul><li>3/4 teaspoon thyme </li></ul><ul><li>1/2 teaspoon pepper </li></ul><ul><li>Salt to taste 1/3 cup fresh chopped parsley </li></ul>

How to make Souvlaki <ul><li>Spray a large saucepan with non-stick cooking spray.   Working in two batches, brown each the beef over medium-high heat.   Reduce heat to medium.   Add the onion, celery and carrots and garlic.   </li></ul><ul><li>Stirring constantly, cook for 5 minutes, until vegetables begin to soften.   Add the remaining ingredients, except parsley and bring to a boil. Reduce heat to medium-low, cover   and simmer 1-1/2 hours, until beef is tender.   Stir in parsley and serve. </li></ul>

Dessert <ul><li>Lemon Pudding Cake </li></ul><ul><li>  2/3 cup Splenda © </li></ul><ul><li>1/4 cup flour </li></ul><ul><li>2 tablespoons lemon juice </li></ul><ul><li>Dash of salt </li></ul><ul><li>Lemon zest (shred, then freeze) </li></ul><ul><li>3 egg yolks </li></ul><ul><li>2 tablespoons lemon juice </li></ul><ul><li>1/2 nonfat milk </li></ul><ul><li>1 8-ounce container low-fat plain yogurt </li></ul><ul><li>1 tablespoon margarine (melted) </li></ul><ul><li>1 tablespoon lime zest </li></ul><ul><li>3 egg whites </li></ul><ul><li>Lime slices (for garnish) </li></ul>

Dessert <ul><li>How to make </li></ul><ul><li>Preheat oven to 350˚.     In a medium bowl, combine Splenda © , flour and salt.   Stir in lemon juice, margarine and lemon zest.   Put aside.   In another medium bowl, beat the egg yolks.   Then beat in the skim milk and low-fat yogurt.   Add to the lemon mixture. </li></ul><ul><li>  </li></ul><ul><li>Beat the egg whites until stiff peaks form, and fold into the lemon mixture.   Pour the batter into an ungreased 8'x 8&quot;x2&quot;   baking pan.   Place the baking pan in a larger pan and place in the oven.   Pour hot water into the larger pan until it reaches about 1 inch deep.   This will keep the cake super moist. </li></ul><ul><li>Bake about 40 minutes, or until set.    Slice into 6 individual servings, place in small bowls and garnish with lime slices,   Best served warm. </li></ul>
