  2. 2. Great Plains Bison <ul><li>From the Great Plains of Canada </li></ul><ul><li>Mainly in Alberta </li></ul><ul><li>On the Ark of Taste to try and preserve genetic purity, flavour through feeding of natural native grasses and traceability of the product </li></ul>
  3. 3. Current Issues <ul><li>Inbreeding in Bison creating genetic issues that is resulting in physical problems in the animal (Leg problems, Sterility etc.) </li></ul><ul><li>The diminishment of native grasses, As well as feeding of grain to the bison are affecting the flavour and health of the animal (High protein grain can cause liver damage, Which is a very important part of the bison to the native population) </li></ul>

Preservation <ul><li>Allowing breeding to happen naturally in the herd prevents the inbreeding and its resulting genetic issues </li></ul><ul><li>Allowing Bison to feed on the natural native grasses that are being restored is causing healthier more flavourful animals </li></ul><ul><li>Each bison is now processed individually and not mixed with any other meat. This allows total traceability and control of the product. </li></ul>
