  2. 2. What exactly are we talking about? <ul><li>The only breed of cattle to have been developed on the North American continent. Known to be hardy and dependable. </li></ul><ul><li>A very unique blend of various breeds from Gascony, Brittany, and Normandy which were allowed to interbreed freely. </li></ul><ul><li>A part of our heritage from the times of the first settlers, around 1608 – 1610. </li></ul>

Why it’s important to the circle of life. <ul><li>The French Canadian Cattle Breeders Association was formed to prevent the extinction of this species. </li></ul><ul><li>Many artisan products come from this cow which were once staples. It is a highly connected part of Quebec’s terroir. </li></ul><ul><li>It is now an endangered species with fewer than 1000 head worldwide. </li></ul>
  4. 4. Why it needs to be saved <ul><li>The Canadienne Cow is a part of our culture, heritage, and terroir. Our pioneering spirit is embodied in this breed. </li></ul><ul><li>Sustainability holds a future for this cow, but the public needs to be better educated on what is at stake. </li></ul><ul><li>Offers a great deal of artisan products which Chefs should be aware of. </li></ul>
