  2. 2. What is it? <ul><li>This is a sausage that was made for generations by the Italian speaking Swiss immigrants. It is a half beef and half pork sausage with distinct measured ingredients. </li></ul><ul><li>Families believe it is the last tie between them and their forbearers of the area so they are guarding the secret </li></ul>
  3. 3. What is at risk? <ul><li>The recipe itself and labour put into making these sausages are on verge of extinction. This is due to the intense labour and families keeping them a secret. </li></ul>
  4. 4. What is being done? <ul><li>A Local butcher of goldfields who is of Italian speaking Swiss decent are presenting these dishes to customers ( including chefs) for purchase on menus. His name is Danny Wanke from the Albert Street Butchery. He is raising awareness for this specific recipe of bull boar sausage and is assuring the public that it is a true authentic recipe passed down through his family. He warns consumers of fakers who are trying to tell the public that they serve authentic bull boar sausage. He continues to say that these imitators pose a threat on the quality of the once famed sausage. </li></ul>

Controversy article <ul><li>I found an article where students from a culinary school were going to use Charlotte (a pink sow) to be minced and used for these sausages until one of their students set her free. This student was in grade 10 and was a animal liberationist. Charlotte was found and then hidden from other liberationists. The student was not found </li></ul>
