RECIPE 
Porra Antequerana (Salmorejo) 
Difficulty: Easy

INGREDIENTS (FOR 4 PEOPLE) 
 1 kg tomatoes knob. 
 1 clove of garlic. 
 A piece of loaf bread without crust is seated (200 gr. Approx.), 
we have more than one day. 
 1/2 green pepper. 
 1 teaspoon salt. 
 5 tablespoons extra virgin olive oil. 
 2 tablespoons white wine vinegar. 
 100 gr. serrano ham taquitos. 
 150 gr. tuna in oil (drained). 
 4 boiled eggs chopped.
PREPARATION: 
 Step 1: Chop tomatoes unpeeled undelinted, peel the garlic 
and beat everything up to follow everything that is crushed 
tomatoes. Then put the peppers and incorporate the salt and 
vinegar. Grind. 
 Step 2: Now we're going to brew with a Chinese colander and 
put it in a bowl, which will breadcrumbs previously soaked and 
drained. We will continue beating until we get a paste; let's go 
slowly with emulsifying oil, which must be added very slowly. 
 Step 3: At this point we can try and rectify salt, if necessary. If 
we want the thickest cream, add more bread, or if you want 
thinner can put some cold water. From here, it's the taste of 
each. 
 Step 4: To serve, his is place on a platter or large bowl and 
deep and put over cooked egg, shredded tuna and diced ham. 
We can keep in the refrigerator until ready to consume 
covered with plastic wrap.
