Today, we learn how to

elements of a restaurant.

How do lighting, temperature,
and smell actually affect our
appetite?
If the environment causes stress
(too loud, too cold, bad smell),
the body produces adrenaline,
which kills the appetite.

Module 1: Creating
Ambiance
What is Ambiance?
Ambiance is the character,
mood, and atmosphere of
a place.
It is carefully designed to
make the guest feel a
specific emotion.
Element 1: Lighting
Fine Dining: Dim, warm
lighting (like candles or soft
yellow bulbs) to create
intimacy.
Fast Food: Bright, white
lighting to keep people awake,
energized, and moving quickly.

Element 2: Music
Music dictates the pace of the
meal.
Classical/Jazz: Encourages guests
to eat slowly, relax, and order
more wine.
Pop/Upbeat: Encourages fast
eating, allowing the restaurant to
turn over tables quickly.
Module 2: HVAC &
Cleanliness
What is HVAC?
HVAC stands for Heating,
Ventilation, and Air
Conditioning.
Temperature Control
The ideal restaurant
temperature is usually
around 20-22 degrees
Celsius (68-72 Fahrenheit).
Too hot, and guests feel
sluggish. Too cold, and the
food gets cold instantly.
The First Step of Prep
Before setting a single plate on a
table, what is the absolute first
step of prepping the dining room?
Answer: Floor sweeping and
mopping. You always clean from
the bottom up to ensure dust
doesn't settle on clean tables.

In your groups, I want you
to act as Restaurant Interior
Designers.
You have 3 minutes to write
down a quick plan for two
different restaurants.
The Two Scenarios
Restaurant 1: A High-End
Romantic Steakhouse.
Restaurant 2: A fast-
paced, student-budget
Burger Joint.
What to Plan
For each restaurant, write
down:
1. What color are the lights?
2. What genre of music is
playing?
3. Is the temperature freezing,
cool, or warm?

Swap your plans with the
group next to you. Do
their choices make sense
for the target customers?

The Best Ambiance is
Unseen
When ambiance is perfect,
guests don't even notice it. They
just say, 'I had a great time!'
Our job is to control these
invisible elements so the guest
can just focus on the food and
their friends.
