Secondary growth is initiated by the formation of a cambial ring from pericycle and parenchyma cells. This cambial ring produces secondary xylem, phloem, and parenchyma in an abnormal pattern. Successive cambial rings form and produce more vascular bundles separated by parenchyma that functions for storage. Over time, proliferating parenchyma cells fill with reserves and vascular bundles are further separated. This results in the thickened, storage root structure seen in beetroots.
