  2. 2. INTRODUCTIONOur love affair with ice cream is centuries old.The ancient Greeks, Romans, and Jews were known tochill wines and juices. This practice evolved into fruitices and, eventually, frozen milk and cream mixtures.The Italians were especially fond of the frozenconfection that by the sixteenth century was beingcalled ice cream. Ice cream is a frozen blend of asweetened cream mixture and air, with addedflavorings. The first public sale of ice cream occurred inParis at the Café Procope in 1670.

INGRIDIENTS• There are three categories of ingredients inthe ice cream mix: dairy, sweeteners, andadditives.• Milk, cream, and non-fat milk solids make up thedairy portion of ice cream.• Sucrose or Splenda® is used to sweeten the mix.• And stabilizers and emulsifiers are added to givethe ice cream the desired body and mouth feel.

  7. 7. Refrigeration Cycle An optimized ammonia refrigerationcycle design is displayed in the followingfigure. The three temperatures utilized for thisprocess are -45.6°C, -40.0°C, and -34.7 °C forthe hardener system , the continuous freezersystem, and the cold storageroom, respectively.

  14. 14. Quality ControlEvery mixture is randomly testedduring the production process. Butterfat andsolid levels are tested. The bacteria levels aremeasured. Each mixture is also taste-tested.Ice cream producers also carefully monitor theingredients that they purchase from outsidesuppliers.
  15. 15. The FutureIce cream manufacturers continue todevelop new flavorings. Ironically, given theindustrys experiences during Prohibition, oneof the more recent innovations has been theintroduction of liqueur-flavored ice creams.
