衛生署公佈健康成人一天的鈣質需求是1000毫克,一般從膳食中攝取鈣在400~1200 毫克/日,理論上是可能足夠的,問題是實際吸收率爲20~30%。為什麼會這樣?因為正常飲食中有不少成份會和鈣交互作用以至於吸收率下降,現代人大魚大肉的飲食習慣,蛋白質攝取過量不是什麼新鮮事。高蛋白、高鈉、高油脂同樣也不利鈣的吸收。
