  2. 2. 君山银针是中国“十大名茶”之一,产于湖南省洞庭湖中的君山岛上,属于黄茶类针形茶,有“金镶、玉”之称。君山茶旧时曾经用过黄翎毛、白毛尖等名,后来,因为它的茶芽挺直,布满白毫,形似银针而得名“君山银针”。君山银针色泽鲜绿,香气高爽,滋味醇甜,汤色橙黄,是中国黄茶珍品<br />JunshanYinzhen, the Yellow Tea, is the most exclusive tea among its group of tea. When brew in a glass, the leaf which looks just like the sword moving up and down is described as ‘Silent bamboo forest’.   3. 3. 文成公主入藏<br />君山银针始于唐代,清朝时被列为“贡茶”。据《巴陵县志》记载:“君山 产茶嫩绿似莲心。”“君山贡茶自清始,每岁贡十八斤。”“谷雨”前,知县邀山僧采制一旗一枪,白毛茸然,俗称“白毛茶”。又据《湖南省新通志》 记载:“君山茶色味似龙井,叶微宽而绿过之。”古人形容此茶如“白银盘里一青螺”。<br />In the history, it was believed that during Tang Dynasty, when Wencheng princess (文成公主) married to Tibet, she picked the Junshan tea as one of her trousseau. JunshanYinzhen became the tribute to emperor since Wu-dai (五代,the Dynasty after Tang), and continued during Song, Ming and Qing Dynasty. During Tang Dynasty, JunshanYinzhen was called “Yellow tail leathers” (黄翎毛 Huang Ling Mao), because when brewed, the yellow bud covered with down was standing up in the glass just like yellow pinion. <br />

  5. 5. 君山又名洞庭山,为湖南岳阳市君山区洞庭湖中岛屿。岛上土壤肥沃,多为砂质土壤,年平均温度16~17度,年降雨量为1340毫米左右,相对湿度较大,三月至九月间的相对湿度约为80%,气候非常湿润。春夏季湖水蒸发,云雾弥漫,岛上树木丛生,自然环境适宜茶树生长,山地遍布茶园。Junshan Island is located in the middle of Dong Ting Lake, which is 15km North East of Yueyang (岳阳) in Hunan Province. The island has 72 mountains with various sizes, these are where the tea gardens located.   6. 6. 君山银针的采摘和制作<br />每年只能在“清明”前后七天到十 天采摘,采摘标准为春茶的首轮嫩芽。而且还规定:“雨天不采”、“风伤不 采”、“开口不采”、“发紫不采”、“空心不采”、“弯曲不采”、“虫伤不采” 等九不采。叶片的长短、宽窄、厚薄均是以毫米计算,一斤银针茶,约需 十万五千个茶芽。<br />君山银针-制作工序<br />制作工序分杀青、摊凉、初烘、复摊凉、初包、复烘、再包、焙干等8道工序,历时三四天之久。<br />http://chinesemedicine.yo2.cn<br />
  7. 7. 品茶讲究: 君山银针在冲泡技术上也与其他茶叶不同。茶杯要选用耐高温的透明玻璃杯,杯盖要严实不漏气;冲泡用水必须是瓦壶中刚刚沸腾的开水;冲泡的速度要快,冲水时壶嘴从杯口迅速提至六、七十公分的高度;水冲满后,要敏捷地将杯盖盖好,隔三分钟后再将杯盖揭开。待茶芽大部立于杯底时即可欣赏、闻香、品饮。<br />鉴别方法: 君山银针,产于湖南岳阳君山。由未展开的肥嫩芽头制成,芽头肥壮挺直、匀齐,满披茸毛,色泽金黄光亮,香气清鲜,茶色浅黄,味甜爽,冲泡看起来芽尖冲向水面,悬空竖立,然后徐徐下沉杯底,形如群笋出土,又像银刀直立。假银针为清草味,泡后银针不能竖立。<br />http://chinesemedicine.yo2.cn<br />
  8. 8. 君山银针鸡片制作材料:主料:生鸡脯肉300克、君山银针茶1克、鸡蛋清3个、百合粉40克、湿淀粉25克、精盐2克、芝麻油5克、熟猪油600克(实耗100克)。君山银针鸡片的特色:色泽白、绿相间,鸡片鲜嫩,银针清香。 做法1、将鸡脯肉剔去筋膜,斜片成约3、5厘米长,2、5厘米宽的薄片。将鸡蛋清盛入碗中,用筷子用力搅打成泡沫状,放入百合粉、精盐、味精调匀。放入君山银针茶,用沸水100克冲泡。两分钟滗去水,再倒入沸水75克冲泡,晾凉。 2、炒锅置中火上烧热。放入熟猪油,烧至四成热时,用筷子夹鸡片逐片下锅走油,约十五秒钟,达八成熟时,连油倒入漏勺沥油。锅内留油5克,倒入鸡片,再将茶叶连水倒入,加入精盐和味精少许,接着用湿淀粉调稀勾芡,持锅颠两下,出锅装盘,淋上芝麻油即成。<br />http://chinesemedicine.yo2.cn<br />
