Hydro Harvest Farms is a Hydroponic Farm that grows all seasonal fruits and
veggies using only Hydroponic methods. Also, we grow non GMO food and we
use IPM and Organic controls for everything. We are a u-pick farm and we also

Farm Fresh Eggplant Parmesan
Fresh Ingredients make this recipe wonderful! Of course this is easy when you grow many of the ingredients as
we do. The spaghetti sauce I used was all freshly made from tomatoes, onions, peppers, herbs and seasonings.
But you can always use your favorite canned variety. The bread crumbs I made from some stale whole wheat
rolls, but store bought bread crumbs is fine. We have chickens at the farm, so the eggs have bright almost
orange yolks, but fresh eggs from the store are fine. No matter what, this is a great recipe especially if you want
to make ahead and freeze.
•3 fresh eggplant, peeled and sliced in1/4 in slices.
•2 farm fresh eggs beaten with milk
•1/4 cup of milk
•3 cups of Italian Seasoned Bread Crumbs
•6 cups of spaghetti sauce
•1 lb. of shredded Mozzarella Cheese (divide in 2)
•1/2 cup of Parmesan Cheese (divide in 2)
Preheat Oven to 350 degrees
1. Combine the eggs and milk in a dish and whisk. Place bread crumbs in separate dish. Dip sliced Eggplant into
egg/milk mixture and then bread crumbs. Layer on a cookie sheet that is lightly sprayed with oil. Bake in
preheated oven for 5 minutes each side.
2. In a 9X13 baking dish spread thin layer of spaghetti sauce on bottom. Place a layer of Eggplant slices on top
of the sauce. Pour another layer of sauce and then sprinkle ½ of the Mozzarella and ½ of the Parmesan Cheese
on top. Repeat with remaining ingredients ending with cheeses.
3. Bake in oven for 35 minutes, or until golden brown.
Assemble all of your ingredients including Eggplant, eggs, milk, spaghetti
sauce, bread crumbs, vegetable spray ( or drizzle a little oil on the cookie
sheet), and shredded cheeses
Wash Eggplant and peel skin. Some Eggplant varieties may not have as tough of skin,
as in the Oriental Eggplants. We are growing the Italian Eggplant this season, so I will
Slice the Eggplant into about ¼ to ½ inch slices.
Whisk your egg and milk in a bowl (flat bottom is best) Place your bread
crumbs in another bowl and have your sliced eggplant in a third bowl.
Spray your cookie sheet or drizzle with a little oil.
Dip the Eggplant into egg/ milk then bread crumbs, each side.
Place single layer on cookie sheet. Bake in oven for 5 minutes each side.
While your Eggplant is baking in the oven, prepare your baking dish. Place a
thin layer of spaghetti sauce on the bottom of the dish.
Have your cheese ready in a bowl. I prefer to combine the 1 Lb. of Mozzarella
and the ½ Lb. of Parmesan into the same bowl and then divide 50/50.
Remember you will need 2 layers of cheeses for the 2 layers of Eggplant.
After the Eggplant has browned in your oven, remove them from the cookie
sheet and place a layer on top of the Spaghetti Sauce in your baking dish.
Then spoon another layer of spaghetti Sauce on top and then ½ of your

the cheese that is left. Bake uncovered at 350 degrees for about 35 minutes.
Serve alone or with any other dish, like Spaghetti. A delicious
fresh picked salad would be a great compliment too! Pick all of
