The most nutritious vegetable you could possibly eat are rich dark leafy greens. These include Beet Greens, Kale, Turnip Greens, Collards, Mustards, Swiss Chard and even Arugula. The major obstacle to people picking or buying Greens are they don't know how to clean them up for cooking. It is so easy! Just follow these step by step instructions and you will be eating more greens and your body will love you for it!

  2. 2. Pick only Fresh Crisp Greens. Pictured are beet greens picked fresh at the farm. Remove the beets (root) first, by cutting the leaf off about an inch from the top of the beet. Same for Turnips.
  3. 3. Determine the Front side from the Back side The front of the leaf has a stem and veins that don’t protrude from the face of the leaf, it is flat. The back of the leaf has a stem and veins that stick out a bit from the surface.
  4. 4. Fold the leaf over and tear the leaf away from the stem
  5. 5. Collect the stemmed leaves, discard the stems into your mulch pile. Serve raw, sautéed, mix into a salad or recipe. Enjoy!
