The firstSt. Patrick’s Day parade was held in the United States on March 17,1762. Irish soldiers, serving in the English military, marched through NewYork City’s streets to the sounds of Irish music. Stir until dissolved. Turnoff the heat, add the saffron threads and stir. Cover and set aside.Preheat a medium-sized pot over medium heat. Sauté the garlic in oil until softenedand golden, about 3-4 minutes. Add the onion and continue to sauté until the onionturns translucent, 5-6 minutes. Add the quinoa and stir to combine. Sauté for abouta minute. Pour in the warm vegetable broth and stir in the coriander. Cover andbring to a boil, stir the quinoa once, and lower the heat to low, simmering for 20-25minutes, until the liquid has been absorbed and the quinoa is tender. Remove fromheat and let stand for 10 minutes. Fluff with a fork, add pine nuts and season withsalt and pepper.INGREDIENTS1-3/4 cup water1 veggie bouillon cubepinch saffron threads (5-6 threads)2 tbsp olive oil5 cloves garlic, minced1 small yellow onion, diced1 cup quinoa(can use other grains, like rice and millet)pinch ground coriandersea salt and fresh ground pepper to taste1/3 cup toasted pine nuts (optional)Curried Kale w/Caramelized Shallots & AgaveDIRECTIONSHeat oil over medium heat, add shallots, sauté until dark brown and caramelized,about 20 minutes. Stir in curry powder, agave and lemon juice. Add kale, soy sauceand water. Cover and steam for 5 minutes, stirring occasionally until kale is stillchewy but tender. As a result, we may throw ourselves intoextreme exercise plans, unhealthy diets andeven severe emotional problems as we struggleto meet someone else’s standard.Which body type are you?Most people are some combination of the threemain body types:1. Ectomorphs. This type is usually tall andthin, with a slight frame and narrow hipsand shoulders.2. Mesomorphs. This type tends to lookbulkiest in the upper body, with broadshoulders and a muscular build.3. Endomorphs. This type has a soft,rounded appearance, usually withshoulders narrower than hips.While we inherit body type, like eye color orface shape, our individual eating and exercisehabits can make a difference. To see how severeyour concern may be, fill out this body imagequestionnaire from the National Women’sHealth Information Center. List five body parts in order of yourdissatisfaction with them, and note whatyou don’t like about their appearance.Some examples:• Thighs too fat• Biceps too skinny• Teeth crooked When you look in the mirror, how doyou usually perceive these parts? (example:disgusting flabby thighs). Notice if yourbody talk is negative and hyper-critical,or objective and neutral. Are you embarrassed or self-consciousabout your appearance? Do you assumethat other people think badly about youbecause of your appearance? Do you avoidwearing a bathing suit at beaches or pools? Think about the ways you may feelashamed of your body part, and mighthave tried to change its appearance(wearing baggy clothes, undergoingliposuction). Have you dieted in anunhealthy way? Spent hours at thegym to change your looks and notto improve your health? When you think about your appearance,do any of these feelings come to mind?• Dissatisfied• Insecure• Distressed• Obsessed• Embarrassed When you think of the things that definewho you are, what comes up first? Doyou consider yourself “fat,” as opposed tointelligent, caring, a good worker or someother personal quality?The questionnaire ends with this thought:“No one is going to comment on theimperfections of your body at your funeral.Practice loving yourself from the insideout, rather than judging yourself from theoutside in.”No matter what body type genetics gave you,you can choose healthy eating and exercisehabits to keep your body going strong. The goal ofcolorectal cancer screening is to identify earlycancers and polyps in order to limit the spreadof disease and save lives.How often should I be screened?Routine screening should occur on thefollowing basis and by one or more ofthe following methods:• Annual testing of your stool for hidden blood [also known as fecal occult blood test (FOBT)]• Flexible sigmoidoscopy every five years• Colonoscopy every ten yearsFOBT is the easiest to perform and can be donein the privacy of your own home. Application ofa stool specimen to special testing cards on threeconsecutive days is the most common way ofperforming this test.Flexible sigmoidoscopy is done at your doctor’soffice and requires brief preparation with a stoolcleanser or laxative. The instrument, a sigmoido-scope, is a short, flexible tube that uses a fiberoptic light to see up to about 60 cm (about 2 feet)inside your rectum and colon. This may place you at increased riskfor lung and heart complications if you haveunderlying lung and heart disease.What can I do to preventcolorectal cancer?There are several things that may lessen your riskfor developing disease of the colon and rectum:• Keep the weight off – many scientificstudies confirm the association betweenobesity and risk for colorectal cancer.• Lower your fat intake – less fat in one’sdiet may decrease the risk for developingcolon polyps, the precursor to cancer.• Eat less red meat – there is somecontroversy here, but red meat has verylittle fiber and slows up the bowel function,allowing toxins to fester within yourbowels. Additionally, one scientific studyconfirmed an association between red meatconsumption and increased colon cancerin women.• Increase your dietary fiber – fiber isgreat for your overall health and improvesbowel function. Why has an organized spiritualcommunity (we call ours “church”) beenso vital to success in all areas of life?Of course, God tells us to gather in His name,and we comply. In so doing, we receive His graceand blessing, and, I hope, always come awayfeeling comforted and uplifted. There are otherbenefits to practicing religion, too. If you wantscientific proof, just ask science.Science findingsthat support religionYes, it’s science that has given us some of theanswers about why and how religion helps us.In the recent past, research has shown a strong,undeniable link between prayers and health.People who were prayed for showed significantimprovement in their health, according to ananalysis of 17 studies conducted over the past40 years. And for some time, researchers haveknown that people who are devoutly religioustend to have stronger marriages, live longer andgenerally be happier than others. No, the scientists said thatreligious people have self-control because theyactually believe and act on the ideals of theirfaith. Their religious values become one withtheir own personal values.
