2. Per secoli il maiale è stato al centro dell'alimentazione in Calabria, con
l'allevamento dell'animale, la sua macellazione e la preparazione degli alimenti
che poi, in una sorta di vera e propria festa, vengono consumati dall'intera
famiglia. Il maiale è stato per secoli la dispensa dei calabresi e non solo: la sua
macellazione, rigorosamente fatta in casa sino ad una ventina di anni fa, era un
rito antico al quale partecipava tutta la famiglia. Una festa, forse cruenta, che ha
caratterizzato e scandito la vita di un’intera regione. Quasi tutti avevano il
porcile, il “zimmunu” (dal tedesco “zimmer”, stanza) ove allevavano il maiale
con gli avanzi di cibo pasturati con la “caniglia”, la crusca.
For centuries, the pig has been the focus of food in Calabria, with the breeding of
the animal, its slaughter and preparation of food which then, in a kind of feast,
are consumed by the entire family. The pig was for centuries the nourishment of
Calabrian people and not only: his slaughter, strictly homemade until about
twenty years ago, was an ancient rite in which the whole family participated. A
function, perhaps bloody, that characterized and marked the life of an entire
region . Almost everyone had the pigsty, the "zimmunu" (from the German
"zimmer", the room ) where they bred the pork with leftover food mixed with
"caniglia", the bran.

dovevano servire ai norcini; cura perché tutto si svolgesse
con la migliore pulizia e igiene; preparazione delle budella
del maiale ucciso per gli insaccati; capacità di cucinare i
pezzi deperibili nei giorni successivi alla macellazione,
come sangue, fegato, piedi, ossi spolpati ecc., e poi,
ovviamente, capacità di cucinare nel corso dell’anno con il
lardo e lo strutto
The slaughter of the pig put the housewife to the
test during all steps of the operation: preparation
of the numerous and robust pieces of white cloth
that had to be used by the butchers; great care in
order that everything took place with the best
cleaning and hygiene ; preparation of the guts of
the pig killed for the sausages; ability to cook the
perishable pieces, as the blood, liver, feet, bones
etc during the days after the slaughter; and then ,
of course, ability to cook a lot of things, in the
course of the year, with the lard.
