Monday nights are notoriously slow for restaurants. So this chef had a genius idea for filling seats: Host TV show-themed dinners.
They've turned out to be big moneymakers, packing in 2-3 times the diners he'd normally get on Monday nights.
Chef David Santos let CNN's Vanessa Yurkevich into his kitchen so she could see what goes into these detail-oriented meals. Yes, there's skin "flayed" from fish. The dessert is themed off The Wall. And there's even a "dragon egg."
It's made him stand out among the pack -- and we'd say that's a pretty smart business idea.
