  4. 4. Chocolate topping For the chocolate topping you need ¼ cup unsalted butter softened, 1/3 cup superfine sugar, 4 ounces bittersweet chocolate melted, and 1/3 cup canned evaporated milk.
  5. 5. Preparation The preparation of this Belgian chocolate cake is incredibly simple. For the cake, in the top of a double broiler you want to melt the chocolate over simmering water until smooth with no lumps at all. Then you want to let it cool slightly, and in a bowl cream the softened butter and sugar until fluffy, after which you beat in the melted chocolate and egg yolks until smooth.
  6. 6. Nine-inch spring-form pan Sift flour over the chocolate mixture and fold in, and then in another bowl you need to beat the egg whites until stiff peaks form. Fold into chocolate mixture using a whisk until no white streaks remain, and then butter a nine-inch spring-form pan, dusting lightly with cocoa powder.
