Addhoney and toss gently. Chill for at least 30 minutes. Spoon fruit into champagneglasses, filling them up halfway. Fill remainder of glasses with chilled champagne. Dipthe edges of the glasses in colored sugar crystals and garnish them with slices oflemons or oranges for a festive touch.

Heat it until it turns blonde. Add the fruits(the thickest ones first). Near the end the of the cooking, add the orange juice. Addthe fruits to the tartlet. Boil down the fruit cooking gravy and pour it gently over thefruits.
