Whip up a white chocolate mousse parfait with strawberries, a pretty red and white
treat. Start off by whisking together egg yolks, sugar, lemon juice, grated lemon zest
and a pinch of salt in a bowl until pale in color and smooth in texture with no sugar
crystals left. Cook this over a double boiler set on top of simmering
water whisking the mixture until thick. A double boiler is simply a

needed for cooking custards with egg yolk. Let the mixture cool to room temperature
by transferring the bowl to a sink filled with cold or iced water.
In another clean and dry bowl, combine cream and white chocolate and cook again on a
double boiler until the chocolate almost melted. Take it off the heat and continue to stir
until the mixture is smooth. Cool this as well to room temperature.
Finally, beat some more cream until firm peaks form then it’s time to assemble the
parfait. Use a tall clear glass where the layers are showcased in its colorful beauty. A
champagne flute is a nice option. Simply alternate the lemon mousse with chopped
fresh strawberries and whipped cream. Make at least two or more layers of each
depending on how you want the portions to be. Top with a sprig of mint and chill until
ready to serve.
This parfait is obviously not for those on a lactose free, low sugar and fat diet. But it’s
alright to indulge in a guilty pleasure once in a while. For a healthier parfait, opt for low
fat versions of cream and natural sweeteners to make the end product lower in glycemic
index making it suitable for diabetics. Stevia and coconut sugar are good white sugar
substitutes but do note that the latter will color the dessert much darker. The fruit still
makes this dessert something that diabetics should eat in moderation.
