Making Excellent Espresso Coffee

  2. 2. 1) Setting Up <ul><li>Turn on Espresso machine ASAP </li></ul><ul><li>Set up area - knock </li></ul><ul><li>- check grinder full and on </li></ul><ul><li>- milk </li></ul><ul><li>- three clean jugs </li></ul><ul><li>- other tools </li></ul><ul><li>- set up bench </li></ul><ul><li>- cups and condiments </li></ul>

  5. 5. 2) Prepare condiments <ul><li>- Set up cups, saucers & spoons </li></ul><ul><li>- Prepare cold beverages first </li></ul>
  6. 6. 3) Extracting the “shot”
  7. 7. 4) Grinding coffee <ul><li>- Fill basket with ground coffee </li></ul>
  8. 8. Getting the ground coffee <ul><li>- “flick” the ground coffee out of the grinder </li></ul>
  9. 9. 5) Tamper coffee <ul><li>Tamper the coffee till firm and even </li></ul><ul><li>Clean top of group handle </li></ul>
  10. 10. 6) Filter Coffee <ul><li>- Put group handle into machine </li></ul>
  11. 11. 7) Extract coffee (25 seconds) <ul><li>Select extraction mode (press button – automatic) </li></ul><ul><li>Single shot of espresso </li></ul><ul><li>Short single shot long single shot </li></ul>
  12. 12. Double shot’s <ul><li>- Double shot of espresso </li></ul><ul><li>Short double shot long double shot </li></ul>
  13. 13. 7) Extract coffee (25 seconds) <ul><li>Extract coffee </li></ul><ul><li>While extracting start frothing </li></ul>
  14. 14. 8) Froth milk (40 seconds) <ul><li>Foam milk quickly (if needed) </li></ul><ul><li>(cold as possible and foam quickly) </li></ul><ul><li>145º </li></ul>
  15. 15. 9) Rest and Clean (20seconds) <ul><li>Rest milk </li></ul><ul><li>clear out “biscuit” and rinse and replace group head </li></ul>
  16. 16. 10) Build Coffee (30 seconds) <ul><li>build the coffee according to order </li></ul><ul><li>Cappuccino </li></ul><ul><ul><li>Add hot milk (till 2/3) to espresso shot and hold back foam with spatula </li></ul></ul><ul><ul><li>Top with foam </li></ul></ul>
  17. 17. 11) Garnish <ul><li>Decorate accordingly </li></ul><ul><ul><li>Sprinkle with choc duster </li></ul></ul><ul><ul><li>Clean up and serve </li></ul></ul>
  18. 18. 12) Serve <ul><li>- Send out ASAP (must be served hot) </li></ul>
