Ingredients:water for soaking1 cup basmati rice, uncooked2 Tablespoon olive oil or peanut oil1-inch cinnamon stick, broken in half1 bay leaf1/2 teaspoon cumin seeds1 whole clove1/2 teaspoon whole black peppercorns1 large onion, chopped thin1 cup basmati rice2 cups water1/2 teaspoon salt, or to tasteDirections:Cover rice with water in a small bowl. Allow to soakfor 20 minutes. Over medium heat, warm oil in asautee pan, and add cinnamon, bay leaf, cuminseeds, cloves and peppercorns. sautee for just 10-15seconds, then add chopped onions and heat untilwell cooked, about 6-8 minutes.Add uncooked rice, and toast for 20-30 seconds, justuntil lightly browned, then add water and bring to aboil.Reduce heat to a low simmer, cover, and heat for 15-20 minutes, until rice is cooked through.Makes three servings of Indian basmati rice.ZAFARANI INDIAN BASMATI RICE RECIPE
