Ingredients:2 servings rice (Zafarani reserve Basmati or ZafaraniBrown)1 tablespoon coconut oil or grapeseed oil2 c. vegetables (mushrooms, carrots, and peas)1/2 c. edamame2 eggs2 tablespoon soy sauce1/4 teaspoon dried ginger1/4 teaspoon garlic powderDirections:If rice is not yet cooked, prepare according topackage directions.Heat the oil in a skillet over medium-high heat.Add the vegetables and cook for a couple of minutes,until they’re nearly tender.Add the cooked rice and then create a well in thecenter of the rice/ vegetable mixture. Add the twoeggs in the center of the well and quickly scramble.Mix the rice, eggs, and vegetables together and addthe soy sauce, ginger, and garlic.
