Mackerel with zafarani basmati rice

Ingredients:8 mackerel fillets2 green peppers, chopped1 onion, chopped2 cloves garlic, chopped50g pitted green olives, sliced100ml olive oil200g basmati rice, cooked as per packageinstructionsbasil leaves, to garnishjuice of ½ a lemonHeat 50ml of the olive oil in a large frying pan over amedium heat and saute the onions and garlic for 5minutes until they start to soften.Add peppers and saute for a further 8-10 minutes untilpeppers are soft. Stir in cooked rice and green olivesand season well with salt, pepper and lemon juice. Makesure the rice is warmed through and keep it warm toone side.Heat the rest of the olive oil in a large frying pan over amedium heat. Season the mackerel fillets and pan fry for10-12 minutes, skin side down to begin with and turninghalfway through. Arrange the warm rice in bowls andplace the mackerel fillets on top.Garnish with basil leaves and serve immediately.“MACKEREL WITH ZAFARANI BASMATI RICE"
