a recent dining experience at
Tivoli in Village Walk, Sandton.
The hospitality and excellent
service left us feeling more
than welcome to dine late into
the night Sipping on Frascatti,
we chatted to executive
CfidT,'Thinus Pretorius, who revealed
his new menu ideas. He plans to
incorporate a Mediterranean feel
to his food, drawing from different
sun-drenched cultures like Greece
and Lebanon. For starters, we had
springbok carpaccio with an onion
and balsamic vinegar marmalade
drizzled with truffle oil and fresh
wild rocket leaves. Delicious. Next,
a sublime pasta of Halloumi cheese
and mint ravioli with a cream and
Ricotta sauce. The main course
consisted of grilled sole, which
was also great. lt's a pity we couldn't
fit in dessert, but it's all the more
reason to go back again. Village

Cachaqa, made from sugar cane,
has to be the national spirit of
Brazil, where it is used to make
the drink that Brazil is known for
- the Caipirinha. A potent mixture
of fresh lime, sugar and cachaqa,
they are flat-out fabulous and
perfect for the holiday season.
Serves 1
50ml Germana Cachaga
1 lime (or 25ml fresh lime juice)
1Sml - 20ml castor sugar
or 25ml sugar syrup
crushed ice
a muddler or a wooden spoon
Cut the ends of the lime off - if left
on they will contribute a bitter taste
to the drink. Cut the lime in half and
remove the white core, then cut
each half into six equal pieces. Add
the lime pieces, 25ml cachaEa and
castor sugar to a tumbler. Using the
muddler or the back of a wooden
spoon, gently crush the lime pieces
to extract the maximum amount
of juice. Finally, add another 25ml
cachaga and some crushed ice, Stir
well so as to cool the drink but more
importantly, to dissolve the sugar.
Fill to the top with ice and serve.
