This quick presentation shows the different stages a roux has to go through to become a dark roux. A dark roux can then be used for making gumbo for instance.

Making a dark roux for gumbo

  2. 2. Start with equal amounts of flour & oil/clarified butter/lard.
  3. 3. Heat the mixture, not too fast and stir regularly
  4. 4.
  5. 5. All clarified butter has melted, continue cooking

  8. 8. The mixture will become darker, this is approximately the ‘peanut butter’ stage.

  11. 11. Continue heating, it should turn a dark dark brown
  12. 12. Even though it has thickened, the flour is actually losing a lot of thickening power while heating it so intensely.

  14. 14. At the point you think you’re burning it, cool it down by adding fresh vegetables
  15. 15. For making gumbo, stir the vegetables through and add water to further cool it and dilute
