Today’s low-fat meal idea is a two dish meal in which we combine brown rice and vegetables along with mushrooms in a single dish – drastically reducing cooking time and efforts. The chicken dish is a simple three step chicken curry, cooked with nothing but what’s left over from a pizza order.

Brown rice pilaf with pizza seasoning chicken

Brown Rice Pilaf Recipe Ingredients:  Brown rice – 2 cups Red pepper – 1 Yellow pepper – 1 Onion – 1 Mushrooms – 250gms Soy sauce – 1 teaspoon Lemon juice – 2 teaspoons Sugar – 1/2 teaspoon Chilli Vinegar – 2 teaspoons Water – 4.5 cups Olive oil – 1 tablespoon Method: Add brown rice with water to a microwave friendly bowl. Put it into the microwave for 19 minutes (without a cover). Add oil oil to a shallow, wide pan and sauté the peppers, mushrooms and onions. Add lemon juice, soy sauce, sugar and chilli vinegar. Stir for one minute. Once the 19 mins are up, add the veggies to the rice in layers. Bung the rice into the microwave for another 4 minutes (without a cover).
  3. 3. 10-minute Pizza Seasoning Chicken Recipe Ingredients: Italian seasoning sachets – 4 to 5 Red chilli flakes – 2 teaspoons Garlic paste – 1 leveled teaspoon Yogurt – 4 tablespoons Salt – 1 leveled teaspoon Chicken – 12pcs (1 to 1 ½ kg) Medium onion – 1 (puréed or finely chopped) Method: Add onion paste to the pressure cooker over a medium flame. Once the onion paste browns, add Italian seasoning, red chilli flakes, salt, garlic paste and stir for a minute or two. Add the chicken pieces. Leave the pressure cooker uncovered over a high flame till the chicken loses its juices and the pieces start drying (about 3-6 minutes). Then, add yoghurt and close the pressure cooker lid. Simmer for seven minutes, after the first whistle. Wait for the pressure cooker to stop steaming before opening the lid.
