at Parkland Garden Centre

For almost 25 years, the great people at Parkland
Nurseries & Garden Centre have been helping Red
Deer and Central Alberta residents celebrate the
Christmas season in style, with their phenomenal
display of life sized ice sculptures created by world
renowned ice sculptor Lee Ross of Calgary.
Ross has been carving in ice for over 30 years
and in the past competed around the world in ice-
carving competitions. He now spends most of his
time on his business, Frozen Memories, which
creates a vast array specialty ice sculptures. Ross
has developed a special process for creating the
clear ice he sculpts and he completes the majority
of the work in his Calgary studio, finishing each
individual creation at the Garden Centre at Red
Deer. Each year, the sculptures can include up to
one hundred 270-pound blocks of ice and can be
over 10 feet tall. Further information on Lee’s work

“We like to think of the ice sculptures as our
Christmas card to the community,” says Gloria Beck
of Parkland Nurseries & Garden Centre. “We develop
a new theme every year with Lee and we think this
year’s design will be one of our best ever. We’re
also delighted to be seeing parents who came to the
displays as youngsters bringing their own children to
see them now.”
With Ross’s specially prepared ice, the sculptures
can last anywhere from a couple of weeks to
two months, depending on weather conditions.
Beck recommends that anyone interested in
the sculptures come by to see them as soon as
possible after they’re installed. The best time for
viewing the sculptures is at night when they are
lit up with an array of different coloured lights.
The sculptures will be free to visit and Parkland
Nurseries & Garden Centre will be accepting
donations to the food bank.
While the ice statues are a major highlight of
Parkland Nurseries & Garden Centre’s Christmas
season, they are not the only feature planned.
Parkland’s well known Christmas Craft Sales
begin in the greenhouse at 10 a.m. on Saturday,
November 15 and continue every Saturday until
December 13. The sales will feature 40 to 50 local
vendors and will be a great opportunity to pick up
a unique present for that special someone. While
you’re there be sure to check out the excellent
selection at Parkland Nurseries & Garden Centre’s
gift shop too.
Parkland Garden Centre will also be offering a
series of Christmas craft workshops that will feature
everything from wreath and table arrangement
design to creating a Christmas Fairy Garden. These
workshops will run from late November until the
week before Christmas and further information is

If it’s a Christmas tree you’re looking for, the
Garden Centre has a great selection of prime
Balsam and Fraser fir, with some up to 12 feet

Step back in time to the days of Charles Dickens,
carriage rides and gas street lighting. The Victorian
era is alive and well throughout Cronquist House this
holiday season.
The stately three-storey farmhouse overlooking
Bower Ponds will be draped in garlands of holly and
pine and is offering its second Victorian Christmas
supper on Dec. 5. The event is already sold out with
the 42 available tickets disappearing in only three
days. If the waiting list continues to grow, another
dinner event may be added to the calendar.
“The dinner was such a hit last year,” said Delores
Coghill, manager at the Red Deer Cultural Heritage
Society that runs the house. “People really liked it
because it was something different.”
The meal will consist of traditional English cuisine
including roasted goose and mince pies.
“Goose is leaner meat and if you cook it properly
you can get this great crispy skin,” said Cronquist
House chef Peter Lao. “Canadians really like their
turkey so I wanted to prepare something different.”
As the Cronquist family was Swedish, there will
also be mulled wine, an invigorating spice-infused hot
beverage that goes hand in hand with cold winters in
Scandinavian culture.
For Elizabeth Plumtree — former long-time head
of the heritage society — Cronquist House’s unique
features ring with Christmas spirit.
“It’s such a beautiful house. The woodwork,
windows, doorways . . . everything can be decorated.
It’s an Edwardian house with a Victorian feel,” Plumtree
said. “It calls for the more traditional decorations —
lots of green — and not as much tinsel.”
According to Plumtree, the Christmas tree was
always placed in front of the three windows on the
main floor when the house was bustling with the
Cronquists — a glowing emblem of seasons’ greetings
for everyone to see when it sat on the hill of its former
location along the C&E Trail.
For the second year, Cronquist House will be open
for lunch and afternoon tea Tuesdays through to
Fridays starting on Nov. 25. For more information, call

Mulled Wine
Ingredients: 1 (750 mL) bottle of red wine
(such as Cabernet Sauvignon or Shiraz)
1 orange, sliced
¼ brandy (optional)
¼ cup sugar
8 whole cloves
2 cinnamon sticks
2 star ainse
1 cup cranberry juice
Method:
Combine all ingredients in a non-
aluminum saucepan and bring to a boil
over medium-high heat. Reduce heat to
medium-low and let simmer for at least
15 minutes. Strain and serve warm.
*You can also place the oranges,
cloves, cinnamon and star anise in a
cheesecloth. Then simply strain and
pull out of bundle when ready.
Peter’s Roast Goose
Ingredients: 3.2 kg goose
Marinade: 1 tbsp. chicken
base
1 tsp. salt
1 tsp whole black peppercorns
½ cup burgundy wine
1 dry bay leaf
½ tsp. of ground sage, ground
thyme, ground garlic powder,
sugar
Ingredients for ‘skin turning:’
1 cup of water
2 cups white vinegar
½ cup maple syrup
½ cup apple cider vinegar
Method:
Add ingredients for skin
turning together and cook
to a syrup (when it boils)
Cut the goose open and
evenly spread the marinade
inside and close
Briefly poach the goose
in boil water to firm its
shape
Run syrup evenly over
the goose. This is called
skin turning, an essential
step for crispy skin.
Set the goose aside for
30 minutes to air dry.
Place the goose breast
side up on a rack set inside
a large roasting pan with
8 cups of water. Cook in
oven for 1 hour at 350
degrees until the skin turns
a golden brown colour, turn
the bird over and cook for
another hour. Add more
water if necessary.
During the process of
roasting, rotate the sides
of the goose to allow for
even heating, cook until the
internal temperature is180
degree.
Leave the roasted goose
to cool for 10 minutes.
Chop into pieces and serve
while the goose is still
warm.

who have passed on, the lack of family connections,

health issues or the fact that family members may
live too far away. Elderly depression and loneliness
during the holidays and at other times of the year
affects seniors around the world. Commonly
known as the “holiday blues,” elderly depression,
loneliness, lack of social interaction, and an inability
to get around severely limit many seniors’ capacity
to make the most of the season. While it may sound
simple, just spending more time with a senior can
make a huge difference in their lives. We very much
need to realize just how special our seniors truly
are and how much they need us and we need them,
especially at this time of year.

For most of us the official kickoff to the
Christmas season at home is when the tree comes
out of the box. Sales of fresh-cut trees have been
on a steady decline over the last decade, down
nearly a third since 2001 according to Statistics
Canada. At the same time, the value of imported
artificial trees has doubled. The staff at Dentooms
are determined to buck the trend by offering a
number of ways you can incorporate fresh natural
elements into your seasonal decorating.
Rebecca Bouw leads the winter classes at
Dentooms which start November 20 and run until
December 18. All the classes are two hours long
and offer participants a fun, hands-on opportunity to
select and build their own natural Christmas feature.
The season starts with three Outdoor Planter
classes which Rebecca says grow in popularity
each year. There are also sessions on decorating
a wreath and building a fairy garden, and two table
centrepiece classes.
Lori Bouw, Rebecca’s mother, demonstrated
the simplicity of building an outdoor planter
using the abundant natural materials Dentooms
source from a BC supplier. The range of greenery
includes a number of varieties of pine, cedar and
fir, which give a rich texture, colour and smell to
the finished planters. Accent features include red
and yellow curly willow, supersized pinecones and
small birch logs. “These are really trending right
now,” Lori said of the logs as she added bright
burlap ribbon to provide the finishing touch. Other
fresh items Lori sees making a comeback among
Dentooms’ customers include indoor tropicals
and herb gardens, all of which are in stock in their
greenhouses year round.
Lori selected a tall twelve inch square planter for
her demo, although class participants would have a
range of fourteen inch pots from which to choose.
Once the planter was filled with potting mix Lori
began to fill it with branches, starting at the centre
and working out, until the base was literally bursting
with greenery. The design would be slightly different
if the planter was going to be placed in a corner or
against a wall rather than viewed from all sides, but
the basic process is the same. Once transported
home, the planter should be watered well and left to
freeze in its outdoor site. They are best kept in the
shade and will last well into the winter, easily until
Valentine’s Day Lori says.
Rebecca loves leading the classes, although —
or perhaps because! — there is very little formal
instruction involved. The two hour sessions make
a great girl’s night out, with lots of visiting and
playing around with the bounty of natural materials.
Dentooms offers custom bookings for the sessions
which are a popular office party outing. The table
centrepieces are best built close to Christmas so
that the natural components are at their best; they
along with the wreaths use floral foam to hold the
branches and keep them fresh.

The Holiday season can be a busy and stressful
time of year. There are stores to visit, presents to
buy and parties to attend. With all this hustle and
bustle it can be easy to forget to relax and actually
enjoy this special time of year. Few things can be as
relaxing and enjoyable as sitting down with family
and friends and sipping on your favourite adult
beverage. But even a walk into a liquor store can
prove to be a stressful experience: with so much
to choose from what should you buy for the Holiday
season?
“There’s always a trend toward premium brands
this time of year,” says Philip Boivin, manager of the
Co-Op Deer Park Liquor Store.
Craft beer sells especially well during December.
These beers are generally brewed by small,
independent companies with a focus on specialty
ingredients and quality; they usually cost a little
more but they can be a real treat over the holidays.
“There is also a real trend in Alberta toward high-
end American whiskey, especially bourbons,” Boivin
continues.
American whiskey is distilled from a fermented
mash of cereal grain and comes in a variety of types
such as bourbon and Tennessee whiskey. Bourbon
is a corn-based whiskey often distilled in Kentucky.
Boivin also points to single-malt scotch as a
huge seller over the Holidays. Scotch is a whiskey
made, not surprisingly, in Scotland, and must be
aged in oak barrels for at least three years. Single
malt simply means that it was made from a single
distillery using malted grain. Boivin laughs that if you
really want to make friends at your next Christmas
party, bring scotch.
Of course, it’s hard to go wrong with a good
ol’ bottle of wine. The fermented grape has been
casting its spell over us for thousands of years
and not by accident – it tastes great. Needless
to say there are plenty of different kinds of wine;
but, in general, they boil down to two types: the
sweeter white wine and the more robust red wine.
What is better is, obviously, entirely your personal
preference.
Wine blends, however, are becoming increasingly
popular. These involve the blending of different
grapes, from different regions, to create a
completely unique and complex taste. Some blends
even involve blending red and white wine together to
get the best qualities of both.
Boivin believes any of the
blended wines would be great
to bring over to a Christmas
party. “The best part about
them is that you don’t feel
like you have to be eating to
enjoy them,” he says.
For those looking for
good value without spending
a lot of money Boivin
recommends VQA wines. VQA
stands for Vintners Quality
Alliance, a regulatory body
that guarantees the quality
of Canadian wines made
in either British Columbia
or Ontario. These are high
quality wines that are often
under $25.
Other types of wine
popular over the Holiday
season include dessert and iced wines. These are
very sweet wines that you would not want to drink by
themselves, but they pair up excellently with all the
desserts you will no doubt be having over Christmas.
And if you really want to get into the holiday
spirit there are many peppermint, gingerbread and
cinnamon liqueurs on the shelves during this festive
time of year.
Whichever drink you choose remember to drink
responsibly, but also to relax and have fun.
