Keto Diet: The Step by Step Keto Cookbook to Gain
Here's a simple and delicious recipe that fits within the guideline
Keto-friendly Chicken Alfredo Zoodles
Ingredients:
- 2 medium-sized zucchinis
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Using a spiralizer or vegetable peeler, create zucchini noodles (zoodles) from the
zucchinis. Set aside.
2. Season the chicken breasts with salt and pepper on both sides.
3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and
cook until browned and cooked through, about 6-8 minutes per side. Remove the chicken
from the skillet and set aside.
4. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
5. Reduce the heat to low and add the heavy cream to the skillet. Stir in the grated
Parmesan cheese and continue stirring until the cheese has melted and the sauce has
thickened.
6. Meanwhile, slice the cooked chicken breasts into thin strips.
7. Add the zucchini noodles to the skillet with the Alfredo sauce. Cook for 2-3 minutes,
stirring gently, until the zoodles are heated through but still slightly crunchy.
8. Add the sliced chicken to the skillet and toss everything together until well coated in the
sauce. Cook for an additional minute to warm up the chicken.
9. Season with salt and pepper to taste.
10. Serve the Chicken Alfredo Zoodles in bowls, garnished with fresh parsley.
Note: You can customize this recipe by adding cooked bacon, sautéed mushrooms, or other
low-carb vegetables to enhance the flavor and variety. Remember to adjust the nutritional
