6. TURKEY FRYING PROBLEM?
"One of the worst things that can happen with
turkey frying is getting splattered with hot oil,"
says Eddie Bain, Investigation and Prevention
Program Director at the Illinois Fire Service
Institute (IFSI). "It will cause burns that are
worse than fire because frying oil sticks to
you.”

7. TURKEY FRYING SAFETY TIPS:
Don’t place too much oil in the fryer pot – Be sure to
follow your owner’s manual in order to use the proper
amount of oil. If the cooking pot is overfilled, you are
more likely to spill oil outside of the fryer. This oil can hit
the burner and cause a fire
Do not drop a frozen or partially thawed turkey into oil
- To better safeguard your cooking pot from
overflowing, make sure your turkey is thawed and be
sure to slowly lower it into the cooking dish. Oil spillover
or splashing can evolve into a fire.
Make sure your Fryer is not too close to other
structures – Over 33% of fires involving a fryer occur in a
garage or on a patio. Make sure you’re far away from
flammable and maintain a safe distance from buildings.
Also, make sure you’re not frying on top of a wooden
structure, such as a back deck or wooden porch.

Remember that Oil and water don't mix- Do
NOT use ice or water to cool down or
extinguish an oil fire. Keep an extinguisher
(approved for cooking/grease fires) nearby
and be sure to call 911 immediately for
help..
Unattended cooking - Frying involves
cooking with a combustible
medium, otherwise known as your cooking
oil or grease. Many frying units fail to have
temperature controls and therefore, if you
leave them unattended, the oil will
continue to heat until the point of
combustion.

11. HOLIDAY RECIPE!
Total Time: 41 minutes Yield: 6-8 Servings Level: Easy
Deep-Fried Turkey INGREDIENTS:
★★★★★ 1 (10-pound) turkey
2 tablespoons House seasoning, recipe follows
2 tablespoons of your favorite dry rub
3 to 5 gallons peanut oil
Cooks Note: To measure the amount of oil needed to fry the turkey, place turkey in
fryer, add water to top of turkey, remove the turkey and the water line will indicate how
much oil will be needed to fry your turkey. Having too much oil can cause a fire. The pot
should not be more than 3/4 full or the oil could overflow when the turkey is added.
DIRECTIONS:
Wash bird inside and out, and allow to drain. Rub turkey all over with House Seasoning.
Coat turkey with dry rub. Allow the bird to sit until it reaches room temperature.
Heat peanut oil in a turkey fryer or a very, very large stockpot to 350 degrees F. Lower
turkey into hot oil, very carefully, making sure it is fully submerged.
Fry turkey for 3 minutes per pound plus 5 minutes per bird.
Remove turkey from oil and drain on paper towels.

House Seasoning:1 cup salt1/4 cup black pepper1/4 cup garlic powder. Mix ingredients
together and store in an airtight container for up to 6 months.
